Peach Raspberry Syrup

What separates this lemonade from your run of the mill lemonade is a delicious and simple peach raspberry syrup. It takes just a few minutes to prepare, but its totally worth it! Start with 12 oz of fresh raspberries and 2 ripe peaches, pitted and cubed in a saucepan over medium heat. You could use frozen fruit, but I find it to be a bit too watery and dilutes the flavor a bit.

To the same pot, also add 1 cup of water and 1 cup of granulated sugar. Bring the pot to a simmer and cook for 10-15 minutes until the fruit is soft, stirring occasionally. Allow the fruit to cool slightly and then puree with an immersion blender until smooth. If you don’t have one, you can also carefully pour into a blender and blend until smooth. Just make sure the lid is slightly vented, as too much heat and steam trapped inside will cause the lid to fly off.

Next, you need to strain. Using a fine mesh sieve  or a cheesecloth over a bowl, strain the fruit liquid to remove all of the pulp and seeds. Set aside and allow it to cool. You can always make a double batch and store the extra in the freezer to use late. Trust me, once peaches are no longer in season, you’ll wish you had!

Now it is time to make the lemonade! In a large pitcher, add 5 cups of water, 2 cups of fresh squeezed lemon juice and 3 cups of ice. Pour in the raspberry peach syrup and stir to combine. Drink this right away, trust me, you will want to, or store in the fridge up to one week.

The best thing about this recipe is you don’t have to stir forever to get the sugar to dissolve like you would if you wanted to make a super no-fuss lemonade recipe. The sugar in the syrup, and the natural sugars of the fruit provide the perfect amount of sweetness to counteract the tart lemon flavor we all love. It is refreshing, it is pretty, and it is delicious! This peach raspberry lemonade is a summertime must.
