French toast is probably one of my favorite sweet breakfast options, but let’s be honest, it is time consuming to make. A pan only fits like 2 slices at a time, and heaven forbid you need to feed a whole family! The first slices get cold before you’re done with the stack. Luckily, there is a solution! Overnight blueberry stuffed french toast casserole!
That is right, all of the deliciousness of a stuffed french toast, but none of the time standing over a stove. Layers of mini french toast slices layered with sweet cream cheese and juicy fresh blueberries. What’s not to love?
Overnight French Toast Casserole
Typically for a french toast recipe, you need to wait for your bread to get stale. Then you have to dip and soak each slice in the egg mix. Next you have to cook each slice individually, which may take long time depending on how big your pan is. Who has time to babysit the stove?
This overnight casserole is literally a few minutes of prep. It begins with 2 12-inch baguettes. Slice them into 1/2 inch slices and set aside. In a mixing bowl, whip together 12oz of softened cream cheese and 1/4 cup of maple syrup until fluffy. Fold 2 cups of fresh blueberries into the cream cheese. Next, spoon about 1 tbsp of the cream cheese mix onto one side of each baguette. Line the slices up in a greased 9×13 inch casserole dish.
Next, beat together 3 eggs, 2 cups of milk, and 2 tsp of cinnamon together in a bowl. Pour this mix over the bread in the casserole dish, making sure to soak every slice of bread. Tightly cover the dish with foil and refrigerate for at least 4 hours, though overnight is best.
Baking The Casserole
After your casserole has sat and soaked, it is time to bake. Preheat the oven to 350 and bake the casserole for 35 minutes covered in foil. Then remove the foil and bake another 10 minutes to allow the top to brown. Once it is ready, take it out of the oven and serve immediately with a drizzle of maple syrup.

Blueberry Stuffed French Toast Casserole
Ingredients
- 2 12in french baguettes
- 12 oz cream cheese softened
- ¼ cup maple syrup
- 2 cups blueberries
- 3 eggs
- 2 cups milk
- 1 tsp vanilla extract
- 2 tsp cinnamon
Instructions
- Begin my slicing your baguettes into ½ in slices
- In a bowl, whisk together cream cheese and maple syrup until combined and fluffy. Fold in the blueberries
- Spoon about 1 tbsp of the cream cheese mixture onto each baguette slice and line them up in rows in a greased 9x13 casserole dish.
- In another bowl, beat together eggs, milk, extract and cinnamon. Pour over the bread in the casserole dish.
- Cover with foil and refrigerate for at least 4 hours or overnight.
- Preheat the oven to 350°
- Bake the casserole covered for 35 minutes, then remove the foil and bake another 10 minutes to brown the top. Serve immediately and top with maple syrup.
