Blueberry Stuffed French Toast Casserole

- 2 12in french baguettes
- 12 oz cream cheese softened
- ¼ cup maple syrup
- 2 cups blueberries
- 3 eggs
- 2 cups milk
- 1 tsp vanilla extract
- 2 tsp cinnamon
Begin my slicing your baguettes into ½ in slices
In a bowl, whisk together cream cheese and maple syrup until combined and fluffy. Fold in the blueberries
Spoon about 1 tbsp of the cream cheese mixture onto each baguette slice and line them up in rows in a greased 9x13 casserole dish.
In another bowl, beat together eggs, milk, extract and cinnamon. Pour over the bread in the casserole dish.
Cover with foil and refrigerate for at least 4 hours or overnight.
Preheat the oven to 350°
Bake the casserole covered for 35 minutes, then remove the foil and bake another 10 minutes to brown the top. Serve immediately and top with maple syrup.
