Blueberry Stuffed French Toast Casserole

Don't fuss about prepping a great brunch for a crowd with this easy overnight blueberry stuffed french toast casserole

Ingredients
  

  • 2 12in french baguettes
  • 12 oz cream cheese softened
  • ¼ cup maple syrup
  • 2 cups blueberries
  • 3 eggs
  • 2 cups milk
  • 1 tsp vanilla extract
  • 2 tsp cinnamon

Instructions
 

  • Begin my slicing your baguettes into ½ in slices
  • In a bowl, whisk together cream cheese and maple syrup until combined and fluffy. Fold in the blueberries
  • Spoon about 1 tbsp of the cream cheese mixture onto each baguette slice and line them up in rows in a greased 9x13 casserole dish.
  • In another bowl, beat together eggs, milk, extract and cinnamon. Pour over the bread in the casserole dish.
  • Cover with foil and refrigerate for at least 4 hours or overnight.
  • Preheat the oven to 350°
  • Bake the casserole covered for 35 minutes, then remove the foil and bake another 10 minutes to brown the top. Serve immediately and top with maple syrup.
