Breakfast is truly my most important meal of the day, so why not make it worthwhile? These delicious bacon egg and cheese french toast sliders are the perfect all in one breakfast. Salty and sweet and all-in-one, this might quite frankly be the ultimate breakfast.

These amazing breakfast sandwiches start with a sweet french toast base! And nothing brings that sweetness better than hawaiian bread, with that subtle pineapple taste.

I used King’s Hawaiian hamburger buns. They are actually quite small and probably not that far off from the size of a normal slider bun. Separate the buns and dunk them in a mixture of 5 eggs, 1/4 cup of milk, 1/2 tsp of cinnamon, and 1/2 tbsp of vanilla extract.

Cook them in a saute pan with a little bit, or a lot, of butter, over medium low heat. I could fit 2 buns (It should take about 3-4 minutes per side, but keep an eye out because all of the sugar in the bread can cause them to caramelize and burn too quickly. Set them on a cooling rack once they are done and start the next batch.

Slider Filling

These french toast sliders are great with some syrup and fresh fruit, but why not make them a whole sandwich? For that, I suggest the classic American bacon, eggs, and cheese!

Start with the bacon which takes the longest to cook. You can bake them in the oven or fry them according to package directions. But here is a secret. If you are pan-frying the bacon, add about 1/2 cup of water to the pan while they cook! The water will evaporate out so don’t worry, but this is a fool-proof way to make sure the bacon cooks evenly and gets super crispy!

For the scrambled eggs, take 6 large eggs, and whisk them together with 1/4 cup of milk, salt and pepper to taste. Cook in a nonstick saute pan with butter for about 5 minutes, running a rubber spatula across the pan occasionally to create a fluffy scramble. Remove from the heat and set aside until needed.

Assembly Time

Now that all of the components are ready, let’s assemble. Take the bottom half of each bun and top it with about 1/4 cup of scrambled eggs. Criss cross one piece of bacon, torn in half, on the eggs and top with 1/2 slice of really delicious cheddar. Top with a top bun and insert a toothpick to hold together.

Repeat this with the remaining buns and serve with a side of maple syrup! Or wrap them up and take them on-the-go. However you enjoy them, they will surely satisfy you!

Ingredients
  

French Toast Sliders

  • 5 eggs
  • ½ cup milk
  • ½ tsp cinnamon
  • ½ tbsp vanilla extract
  • 8 hawaiian roll hamburger buns

Slider Filling

  • 1 lb bacon
  • 6 eggs
  • ¼ cup milk
  • salt and pepper to taste
  • 4 slices cheddar cheese halved

Instructions
 

  • Begin by whisking 5 eggs together with ½ cup of milk, cinnamon, and vanilla extract.
  • Halve Hawaiian hamburger buns and dip them into egg mixture. Place the buns into a saute pan and cook on each side for 3-4 minutes or until golden brown on both side.
  • Meanwhile, fry bacon in a frying pan or cook in the oven according to package directions until crispy.
  • While the bacon and slider are cooking, whisk together remaining eggs, milk, salt and pepper and cook in a saute pan to make scrambled eggs.
  • To assemble, take the bottom of a hamburger slider and top it with about ¼ cup of scrambled eggs, 1-2 slices of bacon, and 1/2 slice of cheddar cheese.
  • Complete with the top bun and serve with syrup on the side for dipping or pouring.
