What is a better Father’s Day breakfast to give your dad than a breakfast to remember to start off his day? Load him up with the classics: bacon, eggs, toast, coffee, maybe even some fresh squeezed orange juice. But whatever you do, don’t forget the star of the show, s’mores waffles. That’s right, waffles stuffed with melty chocolate chips and gooey marshmallows. A campfire classic meets brunch for your old man, and he sure will enjoy it!
Graham Cracker Waffle
The thing that makes these waffles stand out is their rich deep flavor, helping them resemble graham crackers. The key to it, and what separates it from a standard waffle recipe like my Blueberry Cheesecake Waffles, is the addition of graham crackers and brown sugar instead of granulated sugar. These slight changes give us a subtly richer waffle so you get the graham cracker feel from your s’more!
To make these waffles, like most baking recipes, you want to prepare the dry and the wet separately and them combine. This helps the glutens not overdevelop from over-mixing, which would lead to a tough waffle. To make them, just take 1 3/4 cup of flour, 1/4 cup of graham cracker crumbs, 2 tsp baking powder, 1/2 tsp salt, 3 tbsp of brown sugar in a bowl. In a separate bowl, mix together 3 eggs, 1 3/4 cups of milk, 1 tsp vanilla extract, and 1/4 cup of melted butter. Slowly combine the wet and dry ingredients until fully combined.
In your hot waffle iron, spray with cooking spray, and ladle in about ¾ of batter. Cook each waffle for about 5 minutes each, or until golden brown or the light goes off. Use your own judgement here, because I like my waffles extra crispy so I leave them in way longer than the light indicates. At this point you are all set, you can totally serve these graham cracker waffles, which quite honestly do not differ that much from regular waffles that your picky eaters will notice!
S’mores Waffles
Aside from the graham cracker addition in the waffle, how are these s’mores waffles, you ask? Easy answer! Chocolate and marshmallows, duh!!! After each waffle is done cooking and to the doneness of your liking, cut it in half along whatever lines your waffle iron makes. On one half, spoon a few tablespoons of chocolate chips and a handful of marshmallows into the crevices.
Top those with a handful of mini marshmallows and top it all with the other half of the waffle. Put this all back in the waffle iron to sandwich it down like a panini press and let it all melt into bliss. After another 1-3 minutes, the chocolate will have melted and the marshmallows will be gooey, so you know it’s ready to serve. It is giving s’mores sandwich and we are here for it! Top with more marshmallows, chocolate chips and a drizzle of chocolate syrup and it is ready to serve! A regular breakfast is never enough for the great guy you call Dad, so serve him these s’mores waffles instead!

S'mores Waffles
Ingredients
- 1¾ cups all purpose flour
- ¼ cup graham cracker crumbs
- 2 tsp baking powder
- 3 tbsp brown sugar
- ½ tsp salt
- 1¾ cup milk
- 3 large eggs
- ¼ cup melted butter
- 1 tsp vanilla extract
- 1½ cup mini marshmallows
- ¾ cup semi sweet chocolate chips
Instructions
- Start by preheating your waffle maker to medium high heat.
- In a large bowl, whisk together flour, graham cracker crumbs, baking powder, sugar and salt.
- In a separate bowl, mix together milk, eggs, melted butter, and vanilla.
- Slowly pour wet ingredients into dry ingredients bowl. Whisk until combined.
- Heat up a waffle iron, spray with cooking spray, and ladle in about ¾ of batter. Cook for about 5 minutes each, or until golden brown.
- When the waffle is done, cut it in half. On one half, add a few tbsp of chocolate chips, and marshmallows, and place the other half on top.
- Place the waffle back in the waffle iron for 1-2 minutes, or until the chocolate and marshmallows melt.
- Drizzle the waffle with chocolate syrup and serve immediately.
