Breakfast, as important of a meal as it is, can often be overlooked. It’s so easy to reach for the cereal, or make a quick smoothie, or just skip it completely and have some coffee. But you deserve better! With only a few minutes of prep and a quick tour of the oven, you can have a delicious pita breakfast pizza. Start your morning off with a warm, crispy, flavor packed pita, topped with garlicy sauteed kale and spinach, a runny egg, and salty feta.
Sauteed Kale and Spinach
While this dish has many shining stars, I think my favorite part is the kale and spinach. I love garlic on anything, so throwing it into a breakfast dish is a no-brainer. Plus, it comes together in a snap. And pro-tip, I make a little extra so I can snack on it while the pizza is cooking.
To start, heat up a saute pan over medium heat. Add in 1/2 tbsp of olive oil and one minced garlic clove. Saute for about 1 minute or until fragrant. Next, add in 1 cup of chopped kale and 1 cup of baby spinach. This seems like a lot for just 2 pizzas, but trust me, this stuff shrinks! Cook the greens for 3-5 minutes, stirring occasionally, until they have wilted down. Season to taste with salt and pepper (and throw in a little red pepper flake too if you’re up to it), and that’s it!
Pita Breakfast Pizza
Now it’s time for the pizza! Simple take 2 pita rounds and place them on a baking sheet. Top with 1/4 cup each of your favorite shredded cheese. I used gouda, but swiss, pepperjack, munster, anything you can think of works! Next, evenly spread your wilted spinach and kale over the cheese.
Now, take about 1/4 cup of sliced baby bella mushrooms and lay them around your pizzas. You can totally saute these with the spinach, but they cook so quick in the oven there isn’t much need. Using a fork or spoon, make a well in the center of the pita by pushing all of the toppings towards the side, and crack an egg in each well. This keeps the egg for spreading everywhere, including off the pita.
Pop your baking sheet into a 350 degree oven and bake for 15-20 minutes, or until the egg is cooked to your liking. Once done, pull them out of the oven and top with a sprinkle of crumbled feta and a drizzle of olive oil. And viola! in just about 20 minutes you have a delicious, healthy, and fun breakfast!

Pita Breakfast Pizza
Ingredients
- ½ tbsp olive oil
- 1 clove garlic minced
- 1 cup kale torn or cut into small pieces
- 1 cup spinach
- salt and pepper
- 2 pita circles
- ½ cup gouda cheese
- ¼ cup baby bella mushrooms sliced
- 2 eggs
- 2 tbsp feta cheese crumbled
Instructions
- Preheat the oven to 350°
- In a saute pan over medium heat, heat the olive oil and garlic until fragrant.
- Add in the spinach and kale and cook an additional 2-3 minutes, or until the leaves are wilted. Season with salt and pepper to taste
- Lay your pita on a non-stick baking sheet. Sprinkle on the gouda and top with the wilted spinach and kale. Lay on slices of mushrooms.
- Make a well in the center of the pita and crack an egg onto each round. Season the egg with salt and pepper.
- Bake for 15-20 minutes or until the egg is cooked to your liking.
- Sprinkle with feta and serve immediately.
