Listen, canned pumpkin puree is TIRED of just being used as a shortcut for pie just one time a year. So I am on a quest to develop non-pie recipes that make pumpkin puree the star of the show. You can make these any time of the year, and they are great ways to use the extra cans of puree we all have in our pantry after pie season. So first up, a simple, sweet, salty, pumpkin feta dip! Just 5 ingredients and a little bit of garnish, and you have a new surprising star appetizer!
Pumpkin Feta Dip
When I say this dip is easyyyy, I mean it! Just 5 ingredients, and less than 5 minutes is all it takes to pull this dish together. First, pull out a high powered blender or your food processor. Next, take an 8oz block of whole milk feta and break it up into large chunks inside the food processor. To the bowl, you will also want to add 1 cup of canned pumpkin puree.
Next, to help with a light consistency, add in 8oz of plain greek yogurt. (Instead of measuring, I just grabbed one of those individual serving cups out of the fridge). You will also want to drizzle in 2 tbsp of honey and a pinch of salt. Now blend that sucker up. You will want to blend everything together until it is light and smooth, about 40 seconds-1 minute.
How to Serve
Once your dip is smooth and ready to serve, transfer it to a small serving bowl. Drizzle the top with a but more honey and sprinkle on some chopped walnuts for texture and a few fresh thyme leave for an herby note. Because this dip is both sweet and salty, you can serve it with so many things!
First, a nice crusty slice of bread or toasted crackers are never a bad choice. Some crunchy veggies like carrots and cauliflower go great with this dip as well. You could also take this in a sweet direction with some sliced apples or pears. No matter what you serve this with, this pumpkin feta dip is sure to be a crowd pleaser and an unexpected hit on your next grazing board.
