Here I am with all of this leftover pimento cheese and no idea how to use it. But then it hits me! I don’t want to make just some boring sandwich, I need something with substance. When in doubt, throw some bacon on it! And thus, my pimento cheese BLT was born. A southern staple paired with a 3 ingredient sandwich king, could there be a better combo?

Pimento Cheese

This southern staple is so easy to make its insane, and this recipe combines the origins of the dish with its most famous southern twist. All you need is a mixing bowl, a spatula or spoon, and a storage container. Start by adding your ingredients to a mixing bowl. You will need:

  • 8 oz cream cheese softened
  • 2 cups sharp cheddar shredded
  • ½ cup mayonnaise
  • 1 tbsp yellow mustard
  • ½ tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 4 oz diced pimentos

Using a rubber spatula or spoon, combine all of the ingredients until well blended. And that’s it! Store it in an air tight container in the fridge for up to 10 days, if it lasts that long. Click here for the full recipe.

Now that the spread is ready, it is time to build a sandwich. Start by cooking 1 lb of thick cut bacon on the stove or in the oven until the fat has rendered and the bacon is crisp. Next, toast up 8 slices of bread for four sandwiches (or more or less depending on how many you want to make. Spoon 2 heaping tablespoons of pimento cheese on each slice of toast, making sure to spread edge to edge.

Next we layer! On half of the slices of toast, layer on frisée lettuce (or romaine, bib, or iceberg), thick slices of a beefsteak tomato, and 2-3 slices of bacon. Top each sandwich with the remaining slices of the pimento cheese spread toast, slice, and serve. These pimento cheese BLT sandwiches are just one delicious way to use up that big batch of the spread, and it happens to be my new lunch time obsession.

Want a new way to use up that big bowl of pimento cheese? Throw some bacon on it! Slather it on a simple and easy BLT and you've got yourself an elevated sandwich.

Ingredients
  

  • 1 lb bacon slices
  • 8 slices white bread
  • 1 large tomato
  • 4 oz frisee lettuce or romaine or iceberg
  • ½ cup pimento cheese

Instructions
 

  • Cook the bacon in a large skillet or on a baking rack in the oven until crisp. Drain and set aside
  • Toast the bread to the desired color
  • Spread 2 heaping tbsps of pimento cheese on each slice of bread.
  • Top four of the slices of bread with lettuce, a few tomato slices, and 2-3 strips of bacon.
  • Top each sandwich with remaining bread slices, cut in half, and serve immediately.
