Method
- Cook the bacon in a large skillet or on a baking rack in the oven until crisp. Drain and set aside
- Toast the bread to the desired color
- Spread 2 heaping tbsps of pimento cheese on each slice of bread.
- Top four of the slices of bread with lettuce, a few tomato slices, and 2-3 strips of bacon.
- Top each sandwich with remaining bread slices, cut in half, and serve immediately.
