The only thing better than a cocktail is a cookie flavored cocktail…with real booze! That’s right, these margarita cookies, limey sugar cookies drizzled with a tequila lime glaze, taste just like a fresh margarita!
During the summer, I am sipping on margs! Frozen, on the rocks, orange, pomegranate, strawberry. I don’t discriminate! So if I can have those flavors at any time, in the form of a dessert, why wouldn’t I? This sweet, salty, boozy cookie recipe is a sure hit for thos summertime gatherings!
Margarita Cookies
These delicious cookies are basically just a really intense lime flavored sugar cookie. Start with 1 and 1/2 sticks of butter and a cup of sugar. Beat in a stand mixer or in a large bowl with an electric mixer until fluffy. Add in one egg, 1 tbsp of lime zest and juice, 1 tsp of vanilla (or orange…yum!) extract, and a few drops of yellow and green food coloring or gel. Slowly incorporate in 2 cups of flour and a pinch of salt.
Roll into two 10in logs wrapped in parchment paper, and allow to cool in the fridge for 45 minutes or until firm. Roll the logs in a mix of 1/3 cup of sanding or sparkling sugar and 1 tsp of salt. Slice the cookies into about 10 pieces per log and place on a parchment lined cookie sheet to bake for 12-14 minutes.
Once they are done baking, move the cookies to a cooling rack to firm up without steaming. Let them cool and then it’s time to glaze!
Tequila Lime Glaze
The best thing about powdered sugar is the magical ability it has to turn into a glaze instantly. For every 1 cup of flour, all you need is about 2-3 tablespoons of liquid, and you have a sweet, runny glaze.
For these cookies we want to keep with the theme. So for the liquid, all you need are the most basic marg ingredients: tequila and lime! Add one tablespoon of each, plus one tablespoon of water to thin it out, to a cup of powdered sugar and you have the perfect glaze to finish these off.
Pair these with a nice cold marg on the rocks and you instantly have the perfect match. Take these to the pool with your friends, the neighborhood cookout, or keep them all to yourself! I won’t judge.
