Not all dips are made equal! Some are warm and gooey, some are thick and rich, some are sweet. And some, like this lemon herb whipped ricotta dip, are perfectly light, flavorful, and simple.
Perfect for a hot summer day, this dip is surprisingly full of flavor.
Whipped Ricotta
Whipped ricotta dip is so simple and requires zero elbow grease! Simply add ricotta and goat cheese (or cream cheese- you want a little tang) to a food processor and or stand mixer with a whisk attachment and blend until light and fluffy.
You want the ricotta to lose that grainy texture and become velvety and fluffy. And don’t worry if it seems a little runny when you’re done pulsing it all together. Just pop it in the fridge for 10 minutes and it will firm up to the perfect consistency.
Dip Flavors
You can flavor whipped ricotta with any flavor profile you’d like. Honey would add a great sweetness to the ricotta that would pair great with fruit. Maple and bacon would make a perfect sweet and salty combo. Cilantro, lime, and jalapeno would be a great tex mex twist!
But today we are keeping it light and bright with lemon and herbs. Just 1 tablespoon of lemon zest and the juice of half a lemon wakes this dip right up! And I say herbs generically because it is open to interpretation! I used fresh dill, parsley, and rosemary because they add such an earthy yet refreshing note to the dip, but chives, thyme, or oregano would be great as well!
Dried herbs are perfectly acceptable too! Just remember, their flavor is much more concentrated, so use just 1 teaspoon for every tablespoon of fresh herbs in a recipe.
