Lemon Herb Whipped Ricotta Dip

Ingredients
  

  • 2 cups whole milk ricotta cheese
  • 4 oz goat cheese
  • 1 tbsp lemon zest
  • 3 tbsp lemon juice
  • ΒΌ cup parsley Sub. 4 tsp dried parsley
  • 2 tbsp fresh dill Sub. 2 tsp dried dill
  • 1 tbsp fresh rosemary Sub. 1 tsp dried rosemary
  • salt and pepper to taste
  • 2 tbsp olive oil plus more for drizzling on top

Instructions
 

  • In a food processor, blend the ricotta and goat cheese for about 30 seconds, until fluffy and smooth.
  • Add the rest of the ingredients and pulse a few more times until thoroughly combined and the herbs are chopped.
  • Pour in a serving bowl and drizzle with additional olive oil. Serve immediately with vegetables (grilled and/or fresh) and toasted baguette slices.
  • If not serving immediately, cover tightly with plastic wrap until ready to serve.
