I am constantly looking for an easy appetizer to start off my dinner parties and family gatherings. But this is sometimes daunting, knowing you have to cook before you cook! So easy, cook-less snacks that I can make in just a few minutes are a life saver! That is why I love these these Italian Pinwheels. Full of veggies, pepperoni and salami they are so simple and quick to make. Whip up a batch for your next gathering, dinner party, or easy lunch on the go.

Veggie Cream Cheese Spread

To me, the star of this show is the veggie cream cheese! I would honestly spread this on anything: bagels, crackers, use it as a dip for veggies. It’s that good, and that simple! Start with a softened 8oz block of cream cheese in a mixing bowl. Add to it about 4 oz of finely chopped roasted red peppers. I used the jared kind but feel free to roast some from scratch.

Also add in 3-4 chopped pepperoncini or banana peppers, depending on your preferred heat level. Totally optional, but at this point you can also add in 1/4 cup of diced red onion as well. Now blend! I recommend using a hand mixer to all of these ingredients together but a whisk or rubber spatula will do the trick as well. And that’s it!

Now that the spread is ready, it is time to assemble our pinwheels. Take 2-3 large tortillas or wraps (I love spinach wraps) and spread an even layer of the cream cheese mixture from edge to edge. On one side of the tortilla, layer on 1-2 slices of provolone or swiss cheese. On top of that, layer about 6 slices of salami, and 8 pieces of pepperoni. Top that with 1 large romaine lettuce leaf.

Tightly roll the tortilla away from you and cut into 6-8 slices. Serve these right away or place in the fridge up to an hour. You don’t want to make these too far in advance or the lettuce will wilt and the tortilla will get sorry. These are the perfect appetizer for a party or a quick lunchtime snack. And this is just the base, you can make so many variations:

  • Ham and cheese with dijon mustard
  • Turkey Club: turkey, bacon, mayo, lettuce, tomato, cheese
  • Avocado Tuna: Tuna, avocado, red onion, mayo
  • Chicken Salad: shredded rotisserie chicken, dried cranberries, mayo, diced celery, diced white onion
  • Reuben: corned or roast beed, swiss cheese, sauerkraut, Russian Dressing
  • Veggie: hummus, roasted red pepper, red onion, spinach, shredded carrot, cucumber
  • Buffalo chicken: shredded rotisserie chicken, mayo, hot sauce, blue cheese crumbles

Ingredients
  

  • 8 oz cream cheese softened
  • 4 oz roasted red peppers chopped
  • 2 oz pepperoncini chopped
  • 2-2 large flour tortillas or wraps I used spinach wraps
  • 6 slices provolone cheese or swiss
  • 6 oz sliced salami
  • 4 oz pepperoni
  • 2-3 large romaine lettuce leaves

Instructions
 

  • In a mixing bowl, combine cream cheese, red peppers, and pepperoncini.
  • Spread an even layer of the cream cheese spread on the entire tortilla
  • Line up cheese on the side of the tortilla nearest you, followed by about 6 slices of salami and 8 slices of pepperoni, and one leaf of lettuce
  • Roll the tortilla tightly away from you and cut into 6-8 slices
  • Repeat with remaining ingredients
  • Serve immediately or refrigerate an hour. Do not make too far in advance as the lettuce will wilt
