I love a big, hearty salad for lunch, and this honey mustard cobb salad definitely hits the spot. A simple twist on the classic salad, this cobb gets some added flavor with honey mustard chicken and dressing. A little sweet, and some spicy tang take this already flavorful salad to the next level!

The classic cobb salad has a lot of components, but remembering them all is actually pretty easy. Just use the acronym E.A.T. C.O.B.B.
- Egg
- Avocado
- Tomato
- Chicken
- Onion
- Bacon
- Blue Cheese
And it’s as simple as that! Pile that all on a bed of romaine lettuce and you are all set. The classic cobb recipe typically calls for a simple red wine vinaigrette, but this one gets a big flavor boost with honey mustard!
Honey Mustard Chicken
This cobb salad gets the honey mustard flavor from two different components. First is the chicken. A quick marinade is all it takes.
- 1/4 cup of dijon mustard (or grainy)
- 2 tbsp honey
- 2 tbsp red wine vinegar (or apple cider)
- salt and pepper to taste
Just whisk that all together and add your chicken. Let is sit for 20-30 minutes and that’s it! Cook on a grill or in a hot pan, about 4 minutes each side or until it reaches 165 degrees. Let it rest for a few minutes and slice!
Honey Mustard Dressing
The dressing for this cobb is equally as simple. It is essentially the same ingredients as the marinade, with some added flavor.
- 3 tbsp mustard
- 2 tbsp honey
- 3 tbsp mayo
- 3 tbsp red wine vinegar
- 1/4 cup of olive oil
- 2 tsp dried oregano
- 1 tsp onion powder
- salt and pepper
Whisk it all together and drizzle over your delicious salad. Make a double batch and you have the perfect dipping sauce for the kids chicken nuggets, too!
Pull out that big serving platter you need an excuse to use! Lay down your chopped romaine, and pile on all of your cobb components (remember EAT COBB). Honey Mustard Cobb Salad
Ingredients
Cobb Salad
- ½ lb chicken breast
- ¼ cup dijon mustard
- 2 tbsp honey
- 2 tbsp red wine vinegar
- salt and pepper
- 1½ heads romaine lettuce
- 2 eggs hard boiled and peeled
- 3 slices bacon
- 1 avocado
- ½ cup cherry tomatoes halved
- ¼ cup red onion thinly sliced
- ¼ cup crumbled blue cheese
Honey Mustard Dressing
- 3 tbsp dijon or grainy mustard
- 2 tbsp honey
- 3 tbsp mayo
- 3 tbsp red wine vinegar
- ¼ cup olive oil
- 2 tsp dried oregano
- 1 tsp onion powder
- salt and pepper
Instructions
Cobb Salad
- In a small bowl or ziplock bag, mix mustard, honey, vinegar, and salt and pepper. Add in chicken breast and coat. Let the chicken marinate for 20-30 minutes.
- Meanwhile, hard boil the eggs and cook the strips of bacon. Peel and halve the eggs, and crumble the bacon. Set aside.
- Chop the lettuce, halve the tomatoes, slice the avocado, thinly slice the onions, and crumble the blue cheese. Set aside.
- When the chicken is done marinating, grill or cook in a saute pan over medium high heat, about 4 minutes per side, or until the internal temperature is 165°. Allow to cool for 5 minutes and slice
- On a large platter or two salad plates, lay down the lettuce, and top with chicken, eggs, bacon, avocado, tomato, onion, and blue cheese.
Honey Mustard Dressing
- In a small bowl, whisk together all of the ingredients. Season with salt and pepper to taste.
- Serve alongside the salad or drizzle directly on top. Serve salad immediately.
