Honey Mustard Cobb Salad

The classic cobb salad takes a flavorful turn with a sweet and tangy honey mustard.

Ingredients
  

Cobb Salad

  • ½ lb chicken breast
  • ¼ cup dijon mustard
  • 2 tbsp honey
  • 2 tbsp red wine vinegar
  • salt and pepper
  • heads romaine lettuce
  • 2 eggs hard boiled and peeled
  • 3 slices bacon
  • 1 avocado
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • ¼ cup crumbled blue cheese

Honey Mustard Dressing

  • 3 tbsp dijon or grainy mustard
  • 2 tbsp honey
  • 3 tbsp mayo
  • 3 tbsp red wine vinegar
  • ¼ cup olive oil
  • 2 tsp dried oregano
  • 1 tsp onion powder
  • salt and pepper

Instructions
 

Cobb Salad

  • In a small bowl or ziplock bag, mix mustard, honey, vinegar, and salt and pepper. Add in chicken breast and coat. Let the chicken marinate for 20-30 minutes.
  • Meanwhile, hard boil the eggs and cook the strips of bacon. Peel and halve the eggs, and crumble the bacon. Set aside.
  • Chop the lettuce, halve the tomatoes, slice the avocado, thinly slice the onions, and crumble the blue cheese. Set aside.
  • When the chicken is done marinating, grill or cook in a saute pan over medium high heat, about 4 minutes per side, or until the internal temperature is 165°. Allow to cool for 5 minutes and slice
  • On a large platter or two salad plates, lay down the lettuce, and top with chicken, eggs, bacon, avocado, tomato, onion, and blue cheese.

Honey Mustard Dressing

  • In a small bowl, whisk together all of the ingredients. Season with salt and pepper to taste.
  • Serve alongside the salad or drizzle directly on top. Serve salad immediately.
