In a small bowl or ziplock bag, mix mustard, honey, vinegar, and salt and pepper. Add in chicken breast and coat. Let the chicken marinate for 20-30 minutes.
Meanwhile, hard boil the eggs and cook the strips of bacon. Peel and halve the eggs, and crumble the bacon. Set aside.
Chop the lettuce, halve the tomatoes, slice the avocado, thinly slice the onions, and crumble the blue cheese. Set aside.
When the chicken is done marinating, grill or cook in a saute pan over medium high heat, about 4 minutes per side, or until the internal temperature is 165°. Allow to cool for 5 minutes and slice
On a large platter or two salad plates, lay down the lettuce, and top with chicken, eggs, bacon, avocado, tomato, onion, and blue cheese.
