Early March means the end of winter, but not the end of that winter chill. Fight the cold by warming up with a hearty bowl of creamy white turkey chili. Filled with white beans, corn, and plenty of spices, this slow cooker chili is set it and forget it type of meal. Filling, warming, and a canvas for every topping you can dream up, this recipe is a winter’s dream come true!
I remember growing up that nobody was a fan of chili in my house except my dad. Literally everyone else hated beans of all types. I, on the other hand was willing to try everything! And to me, chili was the perfect meal. Meaty, rich, and literally a bowl of deliciousness you can top with whatever you want? What’s not to love. I am a sucker for all things rich and savory, so this white turkey chili is the perfect comfort food.
Creamy White Turkey Chili
This creamy white turkey chili is the ultimate low-fuss meal. With just a few minutes of prep and a can opener, you are hours away from a comforting, delicious meal. To being, brown 1 1/2 lbs of lean ground turkey in a saute pan with one medium diced white onion. When the meat brown and the onions are soft, add in:
- 3 cloves minced garlic
- 2 tbsp ground cumin
- 1 1/2 tbsp chili powder
- 1 tbsp onion powder
- salt and pepper to taste (more than you think you need as this will season the whole chili)
Add the cooked chili to a slow cooker. To the turkey, add one 15 oz can of northern white beans, drained, two 15 oz cans of cannellini beans, drained, one 4oz can of green chiles, and one 12oz bag of frozen corn. Also, pour in 4 cups of chicken stock. Stir all of these together to combine, and add in one 8oz brick of cream cheese to the center of the slow cooker.
Cook the chili on low for 6-8 hours or high for 3-4 hours, stirring occasionally to incorporate the melting cream cheese into the chili. The longer the chili cooks, the thicker and more rich it will become. Once the chili is to the consistency of your liking, you can serve it up! Hardly any work and you have a crock pot full of delicious creamy white turkey chili.
What Can I Top The Chili With?
This chili is absolutely delicious on its own, but all of the fun lives in the toppings! I love to keep my chili toppings simple, but I also think of chili toppings like taco toppings. The sky is the limit. Try any of these ideas to compliment your chili:
- Sour cream
- Lime wedges
- Shredded cheese
- Pico de gallo
- Diced avocado
- Chopped cilantro
- Diced red onion
- Chopped tomato
- Tortilla strips
- Corn chips
