Don’t choose between your favorite candy bar and your favorite cookie again. These chocolate chip snickers cookies are the best of both worlds. These soft cookies are filled with tons of chocolate, caramel, peanuts, and nougat. What’s not to love!

Chocolate Chip Cookies

These cookies start with my regular chocolate chip cookie recipe. Start with the dry ingredients. In a large bowl, sift together:

  • 2 cups of all-purpose flour +2 tbsp of cornstarch
    • OR, ALTERNATIVELY: 1 cup of AP flour, 1 cup of cake flour
  • 1 tsp cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2/3 tsp salt

In a separate bowl, using a whisk or electric hand mixer, whip together 1 stick of butter (1/2 cup, 8 tbsp), 1/2 cup packed light brown sugar, and 1/3 cup of granulated sugar until light and fluffy.

Whisk in one egg and one egg yolk until combined. Now slowly, one cup at a time, add in the flour mix. Switch to a rubber or wooden spoon to mix the dough together. The dough will be thick and a little tough to mix but keep going!

Chocolate and Snickers

These differ from my Triple Chocolate Chip Cookie Recipe with the add-ins. Instead of 3/4 cup of white, milk, and dark chocolate, this uses 1/2 cup of chocolate (your choice), and 1 bag (10oz) of Snickers Baking Bites. If you can’t find these, you can always take mini snickers and cut them in half, but I prefer the baking bites because not as much of the caramel will ooze out. Mix them into the dough until fully incorporated.

Using a small ice cream scoop or tablespoon, for the dough into 20 even sized balls. They will be about the same size as a golf ball. Place the balls on a cookie sheet lined with parchment paper and bake in a 400 degree oven for 10-12 minutes.

The cookies will still be very soft and only slightly golden brown, but they will continue cooking as they cool. Remove them from the oven and cool for about 5 minutes, then transfer to a cooling rack. Serve them warm, highly recommended!

Ingredients
  

  • 2 cups flour

  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter
  • ½ cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 10 oz snickers baking bites or mini snickers cut in half
  • ½ cup semi sweet or dark chocolate chips

Instructions
 

  • Preheat the oven to 350°
  • In a large bowl, sift together flour, cornstarch, baking soda, baking powder, and salt. Set aside
  • In a stand mixer with a whisk attachment, or a bowl with a hand mixer, mix butter and both sugars until fluffy. Add in eggs, and blend until incorporated.
  • With the mixer on low, slowly add in flour mix. Once incorporated, add in snickers and chocolate chips.
  • Form dough into golf ball sized balls and place on a baking sheet lined with parchment paper. This should yield about 20 cookies.
  • Bake for 10-12 minutes. Remove from the oven and allow the cookies to rest for 3 minutes before transferring them to a cooling rack. Best served warm.
