My husbands two favorite things are chicken and ranch. A close third? Bacon! So why not kick off the summer by combining all three. These chicken bacon ranch skewers are delicious, flavor packed, and most importantly easy! Only 5 ingredients and a grill and you are off to an amazing meal, perfect for summer cookouts or just a simple weeknight meal!

Ranch, Ranch, Ranch!

This dish is so simple and starts with just a few easy things! Start with boneless, skinless chicken breast. I used 2 lbs and it yielded 12-15 skewers, but feel free to adjust up or down as needed. Cube the chicken into 1 inch pieces. Place all of your chicken in a bowl and whip out the ranch!! Grab one of those 1oz pouches of ranch seasoning and sprinkle all over the chicken, tossing to coat. Next, pour on one cup of ranch dressing.

Toss the chicken so it is evenly coated, and let this marinate for at least 30 minutes, up to overnight. Most ranch dressings contain buttermilk, which serves as a great tenderizer for chicken. But even if your ranch is buttermilk free, the creaminess of the dressing will keep the chicken nice and moist.

Chicken Bacon Ranch Skewers

While your chicken rests, it is time to prep the other parts of this dish. If you are using wooden skewers, soak them in water at least 30 minutes up to overnight so they do not burn. Pull out a red onion and cut it into 1 inch pieces. Do the same for 1 pound of bacon. The goal is to have everything the same width so it all cooks evenly and one ingredient is not touching the grill.

When the chicken is done marinating, pull out your skewers. Skewer in a pattern of chicken, bacon, onion, repeating 4-5 times depending on the length of your skewers. When you have run out of all of your ingredients, take the skewers to a grill that is heated to about 400 degrees. Make sure the grill is well oiled and lay the skewers diagonal or perpendicular to the grates to achieve nice grill marks.

Cook about 4-5 minutes per side, rotating only when the chicken easily releases from the grill. You will want to make sure the chicken reaches 165 degrees and the bacon is cooked through (it may not be super crispy but make sure it is cooked). Remove from the grill and serve with a side of ranch to really drive the point home! Serve with grilled corn on the cob, baked beans, pasta salad, or whatever your favorite grilling sides are. No matter how you eat them, these chicken bacon ranch skewers are sure to become a summertime favorite.

Ingredients
  

  • 2 lb boneless skinless chicken breast cubed into 1in pieces
  • 1 oz ranch seasoning pouch
  • 1 cup ranch dressing
  • 1 red onion chopped into 1in pieces
  • 1 lb bacon cut into 1in pieces

Instructions
 

  • If using wooden skewers, soak at least 1 hour to overnight to prevent burning.
  • In a large bowl, add cubed chicken breast. Season with ranch seasoning and stir to combine.
  • Add ranch dressing and mix to coat. Marinade at least 30 minutes, up to overnight.
  • Alternating between chicken cube, bacon and onion, layer the ingredients on your skewers, 4-5 pieces of each per skewer.
  • On a grill heated to about 400° and greased, lay each skewer diagonal or perpendicular to the grates to allow for grill marks. Cook on each side for 4-5 minutes, flipping only when the chicken releases easily from the grill.
  • When chicken reaches 165°, remove from the grill and serve with your favorite sides. Serve with additional ranch for dipping.
