I am a firm believer that you should start your morning off right! For me, that means big bold bites that leave me feeling satisfied. My usual go-to is a hearty and healthy breakfast sandwich, and this California breakfast croissant fits the bill! A buttery toasted croissant filled with peppery romesco sauce, spinach, avocado and a fried egg with a runny yolk, what’s not to love. There are literally layers of delicious flavor, and it’s so good, you may forget it’s pretty healthy.
Everyone wants to start off the new year with a healthy reset. A lot of times this means tons of exercise, or a crazy diet that deprives you of all of your favorite foods. Sorry, not for me! I’d much prefer to take small, reasonable steps to stay healthy, like making easy changes to the foods I already love. That’s what is so great about this California breakfast croissant! It is hearty, full of punchy, bright flavor, and I do not feel like I am missing out on anything!
Croissant Essentials
Now to me, a warm buttery croissant is perfect enough to get my morning going, and I am willing to die on that hill. But why stop there? It is literally the perfect vessel to load up all of the most delicious things! And the base of this sandwich in particular consists of two things: fried eggs and turkey sausage patties. So first, toast up two croissants until it reaches your ideal crispness. I like mine to still be pretty tender on the inside, but nice and flakey on the outside.
While the croissant is heating, it is time to fry the perfect sunny side up egg. Being by melting a generous amount of butter in a large nonstick skillet over medium low heat. Once the butter is melted and bubbly, crack in two large eggs. They key to a perfect runny yolk is to cook the egg low and slow. Frying and egg in too high of heat will result in burnt crisp edges and whites that are still loose on top.
So take 4-5 minutes to let those egg whites set and let that yolk become just warmed through. In the same pan, you can also fry up some turkey sausage patties. You can fry up two large ones, or in my case, I buy they mini ones, so I fried 4 (2 per sandwich).
California Breakfast Croissant
Don’t get me wrong, we have the makings of a great breakfast sandwich with just a croissant, sausage and eggs, but let’s take it to the next level! Split those warm croissants in half, and on the top half of each, layer on half of a sliced avocado. Don’t forget to season generously with salt and pepper!
On the bottom half, you will want to dollop on a heaping tablespoon of romesco sauce. And if you don’t know, romesco sauce is a Spanish sauce made of roasted tomatoes and red peppers, and usually thickened with break or almonds. It is typically served with meat or fish, but quite frankly it is good on just about anything. I get mine at Trader Joe’s, but if you can’t find any, feel free to substitute sun dried tomato pesto, or even red pepper hummus!
Next we layer! On top of the romesco, pile on a generous helping of baby spinach or power greens. Top with your sausage patties, perfectly fried eggs, and close with the top of the croissant. You will want to serve these right away, I promise! When you slice these puppies in half, that runny egg yolk will coat all sides of that sandwich and drip right down your hands. California Breakfast Croissant
Ingredients
- 2 large croissants
- 2 large eggs
- 2 turkey large sausage patties or 4 small patties
- 1 large avocado pitted and sliced
- salt and pepper to taste
- ¼ cup romesco sauce or sub red pepper hummus
- ⅓ cup baby spinach or power greens
Instructions
- Slice your croissants in half and toast to preferred crispness
- Meanwhile, over medium low heat, crack the eggs into a pan and season with salt and pepper. Fry the eggs until the whites have set and the yolk is still runny. Also fry the turkey sausage until crisp on both sides, 2-3 minutes per side
- To assemble, spread a generous tablespoon of the romesco sauce on the bottom of the toasted croissant, and spread half a sliced avocado onto the tops, seasoning generously with salt and pepper.
- Layer on a generous helping of spinach onto the bottom of each croissant, followed by the sausage and a fried egg, topping with the other half of the croissant.
- Slice in half to break the yolk and serve immediately.
