Slice your croissants in half and toast to preferred crispness
Meanwhile, over medium low heat, crack the eggs into a pan and season with salt and pepper. Fry the eggs until the whites have set and the yolk is still runny. Also fry the turkey sausage until crisp on both sides, 2-3 minutes per side
To assemble, spread a generous tablespoon of the romesco sauce on the bottom of the toasted croissant, and spread half a sliced avocado onto the tops, seasoning generously with salt and pepper.
Layer on a generous helping of spinach onto the bottom of each croissant, followed by the sausage and a fried egg, topping with the other half of the croissant.
Slice in half to break the yolk and serve immediately.
