Okay, hear me out. Buffalo wings, but in a burger. Sounds a little crazy but I promise it will blow your mind! Take all of the delicious bold flavors of buffalo wings, but put it in a burger. Full of the classic buffalo wing pairings of celery and carrots, and doused in buffalo sauce and blue cheese, the buffalo chicken burger is spicy, crunchy, tangy, and a lot less messy than wings!
Buffalo Chicken Patties
The star of this show is definitely the flavor packed chicken burger patties! They incorporate everything we love about a sloppy, saucy buffalo wing basket into one neat patty. And the best part is they are a cinch to make! In a large bowl, combine the following ingredients:
- 1 lb ground chicken
- ½ cup buffalo sauce
- ⅓ cup celery diced
- ⅓ cup shredded carrot
- ¼ cup red onion diced
- ¼ cup blue cheese
- 1 egg
- ½ cup panko bread crumbs
- 3 tbsp green onions
- 2 tsp salt
- 1½ tsp black pepper
Form this into 4 uniform patties. You could stretch this to 5 patties, but keep in mind they will shrink once cooked. Heat up a fast iron skillet over medium high heat and drizzle with a splash of oil (or bacon fat because why the heck not!?). Sear the patties for about 5-6 minutes per side, or until the internal temperature reaches 165 degrees. And that’s it, the perfect buffalo chicken burger patty.
This recipe is also perfect for meatballs or mini patties for sliders, or you can crumble the meat mixture up and use it in everything from buffalo dip to buffalo egg rolls and taquitos! The sky is the limit. You have all of the flavors you need, so don’t let your imagination stop you.
Buffalo Chicken Burgers
While your patties are cooking, toast up 4 large hamburger buns. Remember, we made the patties a little larger, so you will want a substantial bun to hold them, and all of the sauce we will add!! Layer on some lettuce onto the bottom half of each bun and top with one patty. Just to drive home the flavor, top each patty with an additional tablespoon of buffalo sauce and 1-2 tablespoons of blue cheese dressing. (I lied when I said this wasn’t as messy as wings).
Serve these right away with some additional blue cheese dressing for dipping. And there you have it, a classic tailgate appetizer transformed into a handheld wonder. These bad boys are a Wing Wednesday experience reimagines. Celery, carrots, blue cheese, all of the flavors you need in every bite.

Buffalo Chicken Burger
Ingredients
Chicken Burgers
- 1 lb ground chicken
- ½ cup buffalo sauce
- ⅓ cup celery diced
- ⅓ cup shredded carrot
- ¼ cup red onion diced
- ¼ cup blue cheese
- 1 egg
- ½ cup panko bread crumbs
- 3 tbsp green onions
- 2 tsp salt
- 1½ tsp black pepper
Burger Add-ons
- 4 hamburger buns toasted
- ½ cup blue cheese dressing
- ⅓ cup buffalo sauce
- 4-6 oz frisee lettuce or romaine or bibb
Instructions
- In a large bowl, combine all of the chicken burger ingredient and form into 4 even patties.
- Cook the patties in a hot cast iron skillet, 5-6 minutes on each side or until the internal temperature reaches 165°
- Place the lettuce on a toasted bun, followed by a patty. Top each patty with a tablespoon of buffalo sauce and a heaping tablespoon or two of blue cheese dressing.
- Top with the top half of each bun and serve immediately.
