Breakfast has just gotten a dessert twist with these blueberry cheesecake waffles! These warm, fluffy blueberry waffle are topped with a warm lemon blueberry sauce and a sweet creamy cheesecake topping. Your parents were wrong when they told you can’t have dessert for breakfast!
I am not really the biggest fan of sweet breakfasts, to be honest, but for these, I will make an exception! I LOVE cheesecake, so having a free pass to eat those flavors for breakfast, sign me up!
Blueberry Waffles
Waffles are actually really easy to make from scratch! As tempting as it is to grab that box of mix, you will thank yourself when you bite into a fluffy, buttery, golden brown waffle!
Just take flour, baking powder, salt, cinnamon, and sugar in a bowl. In a separate bowl, mix together eggs, milk, greek yogurt (optional but definitely worth it!), vanilla extract, and melted butter. Combine the wet and dry ingredients and fold in any add-ins (blueberries, raspberries, chocolate chips, etc.). Ladle the batter into a pre-heated waffle iron and let it do all the magic!
Want to be the breakfast champion in the family? Invest in a great waffle iron! I personally prefer the double-sided ones, because let’s be honest, I am impatient, so I want to cut the cooking time in half and get right to eating!
Blueberry Sauce
The first topping that takes us to blueberry cheesecake heaven is the blueberry topping. It is super simple and only requires a few ingredients.
- 1 Cup Fresh (or Frozen) Blueberries
- 3 Tbsp Lemon Juice
- 1 Tsp Lemon Zest
- 2 Tbsp Sugar
- 1/2 Tsp Vanilla Extract
- 3 Tbsp Cornstarch
Just combine the first 5 ingredients in a saucepan and bring to a boil. Combine cornstarch with a slash more lemon juice and add it to the saucepot. Reduce to a simmer and allow the berries to burst and the sauce to thicken. And that’s it!
Cheesecake Topping
To finish this decadent meal off, we need to make the cheesecake topping. A super simple mix of 4 oz cream cheese, 3 tbsp sugar, 1/2 tsp lemon zest, 1 tsp vanilla, and 1/4 cup of heavy cream, and that’s all you need! You could also substitute greek yogurt for the heavy cream. It’s a simple, egg-free cheesecake topping!
This would also be delicious as a snack! Dip fresh fruit or graham crackers in this cheesecake topping and satisfy your sweet tooth cravings!

Blueberry Cheesecake Waffles
Ingredients
Blueberry Waffles
- 2 cups all-purpose flour
- 2 tsp baking powder
- 3 tbsp sugar
- ½ tsp salt
- 1¼ cup milk
- 3 eggs
- ¼ cup butter melted
- ½ cup greek yogurt Or ½ more of milk
- 1 ½ tsp vanilla extract
- 1 tsp cinnamon
- 1 cup blueberries fresh or frozen (do not thaw if using frozen)
Blueberry Topping
- 1 cup fresh or frozen blueberries
- 2 tbsp sugar
- 1 tsp lemon zest
- 3 tbsp lemon juice plus 1 tbsp more for cornstarch
- ½ tsp vanilla extract
- 3 tbsp corn starch
Cheesecake Topping
- 4 oz cream cheese softened
- 3 tbsp granulated sugar
- ½ tsp lemon zest
- 1 tsp vanilla extract
- ¼ cup heavy cream
Instructions
Blueberry Waffles
- In a large bowl, whisk together flour, baking powder, sugar and salt.
- in a separate bowl, mix together milk, yogurt (if using), eggs, melted butter, and vanilla.
- Slowly pour wet ingredients into dry ingredients bowl. Whisk until combined. Gently fold in blueberries.
- Heat up a waffle iron, spray with cooking spray, and ladle in about ¾ of batter. Cook for about 5 minutes each, or until golden brown.
- Place on a wire cooking rack when finished so they do not steam and become soft.
Blueberry Topping
- While the waffles cook, in a sauce pan, add blueberries, lemon zest and juice, sugar, and vanilla.
- Bring to a boil and allow the berries to cook for about 5 minutes.
- In a small bowl, combine cornstarch and 1 tbsp of lemon juice. Pour into the saucepan and reduce to a simmer. Simmer for about 3-5 more minutes or until the sauce is thick.
- Set aside to cool slightly.
Cheesecake Topping
- In a mixing bowl, whisk together the cream cheese and sugar until smooth.
- Add remaining ingredients.
- Dollop blueberry and cheesecake toppings on waffles and serve immediately.
