Though we may not be willing to admit, we all love a good fast food bacon egg and cheese biscuit (or am I the only one confessing a guilty pleasure here). Well now you can turn your favorite breakfast sandwich into a home-cooked dish for a crowd. A warm and cheesy bacon egg and cheese biscuit casserole is the perfect family brunch dish for those days when you aren’t going 100mph. All the goodness of the breakfast sandwich you love, with a new warm, gooey, baked look.

Breakfast All In One

Waking up on a Sunday morning to the smell of bacon was tradition in my house growing up. During the week, with a rush to get 3 kids off to school, we got accustomed to toaster waffles and bagels, but on the weekend, we did it up! Scrambled eggs, french toast, waffles, you name it, we would probably find on the breakfast table. Now, this bacon egg and cheese biscuit casserole isn’t actually a dish I grew up on, but it’s a combination of all of my favorites, so I kind of wish I had!

This dish is a combination of weekend breakfast staples, all in one. And the best part is, chances are you have all 5 simple ingredients already in your fridge for breakfast! Yes that’s right, only 5 ingredients.

  • 1 lb sliced bacon
  • 2 (16.3oz) cans of southern style biscuits
  • 10 eggs
  • 1/2 cup of milk
  • 2 cups shredded cheddar cheese

Baking the Casserole

Begin by cooking your bacon, stovetop or in the oven according to package directions. Drain the fat and cut it into 1/2in pieces and set aside. Now, in a large bowl, beat together eggs and milk. It is optional to add salt and pepper to taste, as the bacon, cheese, and biscuits will all add a good amount of salt and flavor to the dish. Add your chopped bacon and 1 1/2 cups of cheese to the egg mixture and beat once more.

Now open your 2 biscuit cans (16 biscuits total) and cut each biscuit into 4 equal pieces. Add all of the biscuit dough to the egg mixture and stir to combine. Pour all of this into a greased 13×9 baking dish and cover it with foil.

Pop it into a 350 degree oven and bake for 30 minutes. Remove the foil and bake another 20-25 minutes or until golden brown and completely set. Slice and serve immediately.

Ingredients
  

  • 1 lb sliced bacon
  • 2 16.3 oz cans of southern style biscuits
  • 10 eggs
  • salt and pepper
  • ½ cup milk
  • 2 cups shredded cheddar cheese divided

Instructions
 

  • Preheat the oven to 350°
  • Cook bacon in a large skillet, drain fat, and chop into ½in pieces
  • Spray a 13x9 casserole dish with nonstick spray.
  • In a large bowl, beat together eggs, milk, salt and pepper to taste. Whisk in 1 ½ cups of shredded cheese and bacon.
  • Cut each biscuit into 4 equal pieces and add to egg mixture, stirring to coat evenly. Pour into casserole dish and sprinkle with remaining cheese.
  • Cover with foil and bake for 30 minutes. Remove foil and continue to bake for another 20-25 minutes or until golden brown and set.
  • Slice and serve immediately.
