Bacon Egg and Cheese Biscuit Casserole

Ingredients
  

  • 1 lb sliced bacon
  • 2 16.3 oz cans of southern style biscuits
  • 10 eggs
  • salt and pepper
  • ½ cup milk
  • 2 cups shredded cheddar cheese divided

Method
 

  1. Preheat the oven to 350°
  2. Cook bacon in a large skillet, drain fat, and chop into ½in pieces
  3. Spray a 13x9 casserole dish with nonstick spray.
  4. In a large bowl, beat together eggs, milk, salt and pepper to taste. Whisk in 1 ½ cups of shredded cheese and bacon.
  5. Cut each biscuit into 4 equal pieces and add to egg mixture, stirring to coat evenly. Pour into casserole dish and sprinkle with remaining cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil and continue to bake for another 20-25 minutes or until golden brown and set.
  7. Slice and serve immediately.
