Everyone loves a good asian chicken salad, but why not switch it up with a delicious piece of salmon! This Asian salmon salad is full of juicy mandarins, crunchy wontons, and topped with a miso glazed salmon. And the best part is it gets dressed with an amazing orange ginger vinaigrette.

Miso Glazed Salmon

The star of this dish is definitely the salmon! Super simple to make but packed with more flavor than you’ll believe. Start with 2 8oz salmon filets. In a small bowl, mix together:

  • 1/4 cup low sodium soy sauce
  • 1 tbsp miso paste
  • 1 tbsp grated ginger
  • 2 tbsp brown sugar

Brush half of this sauce over the top of the salmon and place the fillets skin side down in a hot cast iron skillet or a grill set to medium heat. Cook for 4-5 minutes and then flip. Brush the other side with the remaining sauce and cook another 4-5 minutes or until the salmon reaches 145 degrees.

Asian Salad

While the salmon is cooking, assemble the simple salad. Start with a bed of chopped romaine or mixed greens. Top it with:

  • 1/4 cup slivered almonds
  • 1/2 cup mandarins
  • 1/2 cup cherry tomatoes
  • 1/3 cup fried wonton strips

Place your cooked salmon right on top. The fillets are so flavorful you could finish this salad with a little olive oil and a squeeze of lemon, but to really take it over the top, we will whip up an amazing dressing!

Orange Ginger Dressing

There are some great asian salad dressings out there, like Brianna’s Saucy Ginger Mandarin or Target’s Ginger Miso Orange Dressing, but to me, nothing beats a god homemade dressing! This one is a delicious orange ginger dressing. So simple! Simply whisk together:

  • 1/3 cup orange juice
  • 1/4 cup olive oil
  • 1 tsp grated ginger
  • 1 tsp orange zest
  • 2 tsp honey
  • 1/2 tsp miso paste (white is preferred but red works as well)
  • 2 tsp vinegar
  • pinch of salt

Drizzle this delicious dressing right over that asian salmon salad or serve it on the side! This is one salad that will definitely hit the spot at lunch time.

Ingredients

  • 2 8oz salmon filets

  • 5 cups chopped romaine or mixed greens
  • ¼ cup slivered almonds
  • ½ cup mandarins
  • ½ cup cherry tomatoes halved
  • cup wonton strips

Orange Ginger Vinaigrette

  • cup orange juice
  • ¼ cup olive oil
  • 1 tsp orange zest
  • 1 tsp grated ginger
  • 2 tsp honey
  • ½ tsp miso paste
  • 2 tsp vinegar
  • pinch of salt

Instructions
 

Asian Salmon Salad

  • Heat a cast iron skillet or grill to medium heat. Pat salmon dry
  • In a bowl, mix together soy sauce, miso, ginger and sugar. Brush half over the top of the salmon.
  • Place salmon in the skillet skin side down and cook for about 4-5 minutes. Flip and brush with remaining sauce. Cook an additional 4-5 minutes.
  • While the salmon is cooking, in a bowl or on a large salad plate, add lettuce, almonds, mandarins, tomatoes, and wonton strips. Top with salmon.

Orange Ginger Vinaigrette

  • Whisk together all of the ingredients until the miso had dissolved. Pour over salad or serve on the side
