Asian Salmon Salad

low sodium soy sauce

miso

tbsp
grated ginger

brown sugar

chopped romaine or mixed greens

slivered almonds
½
cup
mandarins
½
cup
cherry tomatoes
halved

wonton strips
Orange Ginger Vinaigrette
⅓
cup
orange juice
¼
cup
olive oil

tsp
orange zest
1
tsp
grated ginger

tsp
honey
½
tsp
miso paste
2
tsp
vinegar
pinch of salt
Instructions
Asian Salmon Salad
Heat a cast iron skillet or grill to medium heat. Pat salmon dry
In a bowl, mix together soy sauce, miso, ginger and sugar. Brush half over the top of the salmon.
Place salmon in the skillet skin side down and cook for about 4-5 minutes. Flip and brush with remaining sauce. Cook an additional 4-5 minutes.
While the salmon is cooking, in a bowl or on a large salad plate, add lettuce, almonds, mandarins, tomatoes, and wonton strips. Top with salmon.
Orange Ginger Vinaigrette
Whisk together all of the ingredients until the miso had dissolved. Pour over salad or serve on the side
