Asian Salmon Salad
- Heat a cast iron skillet or grill to medium heat. Pat salmon dry
- In a bowl, mix together soy sauce, miso, ginger and sugar. Brush half over the top of the salmon.
- Place salmon in the skillet skin side down and cook for about 4-5 minutes. Flip and brush with remaining sauce. Cook an additional 4-5 minutes.
- While the salmon is cooking, in a bowl or on a large salad plate, add lettuce, almonds, mandarins, tomatoes, and wonton strips. Top with salmon.
Orange Ginger Vinaigrette
- Whisk together all of the ingredients until the miso had dissolved. Pour over salad or serve on the side
