I must admit, when at a party, there is nothing I appreciate more than hand held appetizers and snacks! But it gets even better when those small bites are hearty and satisfying like these bacon cheeseburger sliders! Gooey with two types of melted cheese, stuffed to the brim with beef and bacon, with layers or tomato and grilled onions, all packed into a personal slider bun. These are great for tailgates, summer parties, or just feeding a hungry family in a jiffy!
Hamburger Slider Filling
The center of these delicious sliders is the ground beef! Unlike other sliders, these are not made with individual patties. Who has time for that? Instead, let’s make a ground beef mixture that is packed with classic burger flavors! Think cheeseburger sloppy Joe?? In a large skillet, cook 1 lb of ground beef until completely browned. I like to use leaner met like 90-10. Drain the excess fat and place back on the burner. To the skillet, season beef with 1 tsp of smoked, paprika, 2 tsp of onion powder, and a generous pinch of salt. Add in 1 tbsp of minced garlic and cook for about 1 minute or until aromatic.
Next, stir in t tbsp ketchup, 2 tsp of yellow mustard, 2 tsp of Worcestershire sauce, and one drained 10-oz can of rotel. Cook until most of the liquid has been absorbed. Now, set meat aside and add 1 diced yellow or white onion to the same pan the meat was cooked in. Sauté for 4-5 minutes over medium heat or until the onions begin to brown and caramelize.
Bacon Cheeseburger Sliders
While the beef is cooking, preheat the oven to 350. Spray an oven-safe casserole dish, about 9×13 inches. with nonstick cooking spray or line with parchment. Add the bottom halves of one 12-pack of slider buns to the dish. On top of the bun bottoms, layer on 6 slices of sliced American cheese. Cheddar or any other type of cheese is optional here as well! Top the cheese with the cooked ground beef. Sprinkle on the cooked onions, and then break large pieces of cooked bacon over the onions. Shortcut: I used the pre-cooked bacon for this recipe to save time!
Top the slider filling with 1-1 1/2 of the shredded cheese of your choice ( I like cheddar or Colby jack) and place the top with the slider buns on top. Meanwhile in a small bowl, mix together 6 tbsp of melted butter, 2 tbsp brown sugar, 1 tsp mustard, t tsp Worcestershire, 1 tbsp each sesame seeds and minced onion. Spoon or brush the glaze mixture over the tips of the buns. Wrap the casserole dish tightly with foil and place in the oven for 15-20 minutes, or until the cheese is completely melted through.
Once out of the oven, I like to use a knife to cut separate the sliders and top each slider with a sliced pickles (optional) and a toothpick. You’ll want to serve these warm, so pop these in the oven just before serving, or feel free to reheat for 5 minutes once ready to serve. These bacon cheeseburger sliders really are a crowd pleaser! Whip out this recipe during your next tailgate, birthday party, or even just a weeknight meal with the family. Bite size but packed with flavor, they are the best party snack!

Cheeseburger Sliders
Ingredients
- 1 lb ground beef
- 1 tsp smoked paprika
- 2 tsp onion powder
- 1 tsp salt
- 1 tbsp minced garlic
- 2 tsp yellow mustard
- 1 tbsp ketchup
- 2 tsp Worcestershire sauce
- 1 10oz can rotel with chiles drained
- 1 medium yellow or white onion diced
- 6 strips cooked bacon
- 12 slider buns
- 6 slices American or cheddar cheese
- 1½ cups shredded cheese cheddar or Colby jack
Glaze
- 6 tbsp butter melted
- 2 tbsp brown sugar
- 1 tsp yellow mustard
- 2 tsp Worcestershire sauce
- 1-2 tbsp sesame seeds
- 1 tbsp dried minced onions
- 12 pickle slices optional
Instructions
- Preheat the oven to 350℉

- On top of the bun bottoms, layer on the sliced cheese. Top with the cooked ground beef.
- Sprinkle on the cooked onions, and then break large pieces of cooked bacon over the onions.
- Sprinkle on shredded cheese and top with the slider bun tops.
- Meanwhile in a small bowl, mix together melted butter, brown sugar, mustard, Worcestershire, sesame seeds and minced onion.
- Spoon or brush the glaze mixture over the tips of the buns. Wrap the casserole dish tightly with foil and place in the oven for 15-20 minutes, or until the cheese is completely melted through.
- Use knife to cut separate the sliders and top each slider with a sliced pickles (optional). Serve immediately.
