Everything but the bagel seasoning is all the craze right now. I credit Trader Joe’s for this masterpiece, but I am sure it started long before that. What exactly is the craze you say? It’s as simple as it sounds. Take the seasoning that you would find on the outside of an everything bagel, and put it on anything you can think of that isn’t a bagel! I thought I’d seen it all until I tried this recipe. Everything roasted potatoes! Crispy, fluffy oven roasted potatoes coated in crunchy, salty everything bagel seasoning. And to make it true to the original, why not dip them in a tangy cream cheese dip!
Everything Roasted Potatoes!
This may be the most simple recipe I have ever made that packs such a big punch. Simple in the fact that it is only 5 minutes of prep and 4 ingredients! To begin, I like to use 1lb of petite golden potatoes and cut each in half. You can also use a large potato like a buttery Yukon gold, but make sure to cut them down into 1in pieces.
Add the potatoes to a bowl and drizzle with 3-4 tbsp of olive oil. Don’t be stingy here, this is what helps the seasoning stick! Now, sprinkle on 2 generous tbsps of some everything but the bagel seasoning. Don’t have any on hand or can’t find it in the store? Just combine equal parts poppy seeds, sesame seeds, dried minced garlic, and dried minced onion, plus 1/2 the amount of flaky salt. Also sprinkle on 1/4 cup of grated parmesan, and toss to coat. If you’re using a store-bought seasoning blend that does not contain salt, feel free to salt to taste, keeping in mind that potatoes absorb a lot of salt!
Preheat the oven to 425, and transfer the coated potatoes to a baking sheet lined with parchment paper. Make sure the potatoes are in an even layer and spaced out so they roast, not steam. Roast them for 30-35 minutes or until golden brown. And just like that, you have a simple 4-ingredient side dish!
Cream Cheese Everything Dip
Call me crazy, but I have a hard time having most potato side dishes without a condiment! Maybe French fries have me brainwashed. These everything roasted bagels are great on their own, but let’s take the whole ball theme all the way home with a cream cheese dip! It adds a layer of freshness to the heavy potatoes, and also gives them a nice tang, bringing home the bagel flavor.
First, soften 1/4 cup of cream cheese (or use whipped cream cheese). Add to that 1/3 cup of sour cream and 3 tbsp of lemon juice. When combined and smooth, add in 1 tsp of garlic powder, 2 tsp of everything seasoning, and 2 tbsp of sliced green onions. Stir to combine and refrigerate until ready to serve. When the potatoes come out the oven, pop them onto a serving plate or bowl, and serve with the dip on the side. Garnish both the dip and potatoes with more green onion, and viola! Amazing everything roasted potatoes with a cream cheese dip. Now that is a side dish worthy of the spotlight.
