Preheat the oven to 425°
Wash, rinse and dry your potatoes.
Slice each potato in half (or quarters if they are large) and place in a bowl.
To the bowl, drizzle on the olive oil and sprinkle on everything seasoning and parmesan. If your seasoning mix does not have salt, add salt to taste (about 2 tsp).
Toss to coat and dump the potatoes on a baking sheet lined with parchment.
Bake for 30-35 minutes, tossing halfway
Meanwhile, in a small bowl, mix together all of the ingredients for the dip and keep refrigerated.
When ready to serve, remove the potatoes from the oven and place on a serving platter/bowl. Serve with the cream cheese dip on the side and enjoy.
