Take back control of breakfast. No more store-bought foods with who-knows-what inside. Make your own homemade breakfast sausage in a flash. The maple sage breakfast sausage patties are packed with flavor, and you can rest easy knowing exactly what’s inside. And they do not take any longer to make than the kind you can buy in the store.
If I am being completely honest, I could eat nothing but breakfast sausage in the morning every day, maybe with a sid of eggs…maybe. Skip the pancakes and waffles, I’ll take sausage. This maple sage breakfast sausage just might be the best thing I have whipped up ever.
Sausage Seasoning
I have never tried to make breakfast sausage at home because I honestly thought it was complicated. There is a reason it’s premade in the store, right? To me, it was like trying to make my own hot dogs, there has to be some trade secret to the perfect recipe. Well guess what, there isn’t! All you really need to do is get the seasoning blend just right.
I started with one pound of ground pork. To it, I added one tablespoon of maple syrup. This does not seem like a lot, but maple has such a distinct flavor, and adds just enough sugar to allow for that signature caramelized crust on the outside of the patties that I love so much. Then, I add in 1 tablespoon of salt and 1/2 teaspoon of each of the following:
- Black Pepper
- Ground Sage
- Onion Powder
- Dried Thyme
- Nutmeg
Also add in 1/4 tsp of cayenne pepper for a little kick, but this is totally optional. If you would like, at this point you can allow the pork to chill in the fridge for 20-30 minutes to let the flavors blend. I personally do not have the patience so I go straight to making the sausage.
Cooking the Sausage
When your pork mixture is ready, form it into 8 even round patties. You can do this by hand, but for a perfectly even patty, I like to use a 2 1/2 inch biscuit cutter or ring mold. This ensures they come out round and also cook evenly. Next, heat a nonstick skillet over medium heat and cook the patties for about 3-4 minutes per side. You want to make sure the juices run clear, and you get a nice caramelized brown crust on both side.
Serve immediately, whether that’s with sunny side up eggs, a side of pancake or waffles, or next to a stack of french toast. Make the patties larger and place them on a sausage egg and cheese bagel, or just eat them plain, like me! Either way these homemade maple sage breakfast sausage patties will change the way you do breakfast.

Maple Sage Breakfast Sausage
Ingredients
- 1 lb pork sausage chilled
- 1 tbsp maple syrup
- 1 tsp salt
- 1 tsp black pepper
- ½ tsp ground sage
- ½ tsp onion powder
- ½ tsp dried thyme
- ½ tsp ground nutmeg
- ¼ tsp cayenne pepper
Instructions
- In a mixing bowl, combine pork, maple syrup, and all of the seasonings.
- Form the pork into 8 round patties. I used a 2½ inch biscuit cutter as a ring mold to make sure they were perfectly round
- Heat a nonstick skillet over medium heat. Cook each patty for 3-4 minutes per site until browned and caramelized on each side.
- Serve immediately.
