As a kid, I was not the stereotypic child who wouldn’t eat their greens. In fact, broccoli has always been my favorite vegetable, probably because it was mostly served covered in cheese or mixed into chicken alfredo. But as I got older, I learned to appreciate a simpler preparation. Oven roasted with crispy caramelized edges is my new favorite way to eat this veggie!
Simple Ingredients
I don’t know about you, but growing up, when my parents were busy, our veggies came out of a can or the freezer. I never said this then but I can say it now that I am a legal adult: THAT IS NO WAY TO LIVE! Haha. I honestly think the reason so many kids don’t like their veggies is because they aren’t prepared the best way they can be!
Delicious preparation doesn’t have to mean difficult preparation, though! A few simple ingredients and 20 minutes is all you need to make delicious and flavorful broccoli. All you need to make this amazing roasted parmesan broccoli is:
- 1 1/2-2 cups broccoli florets
- 3 tbsp olive oil
- 1/3 cup grated parmesan
- 1 tbsp lemon zest
- salt and pepper
- red pepper flakes (optional)
Roasted Broccoli
Making this dish is as simple as its ingredients. Start with a large sheet pan. Layer on an even layer of your broccoli. Remember to leave space and use two sheets if necessary, you want the broccoli to roast and get crispy, and they will steam if the pan is overcrowded.
Drizzle on olive oil, parmesan, lemon zest, salt, pepper, and red pepper flakes evenly over the broccoli and toss to coat evenly. Put back into an even layer and place in a 425 degree oven for 17-20 minutes, or until the broccoli is tender and crispy around the edges. Sprinkle with a little more parmesan and a squeeze of lemon and serve immediately.

Roasted Parmesan Broccoli
Ingredients
- 1½-2 lb fresh broccoli heads cut into even sized florets
- 2-3 tbsp olive oil
- ⅓ cup grated parmesan cheese
- ½ tbsp lemon zest
- 1½ tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes optional
Instructions
- Preheat the oven to 425°
- On a large sheet pan, spread broccoli florets into an even layer
- Drizzle with olive oil, lemon zest, parmesan cheese, salt, pepper, and red pepper flakes. Toss to coat evenly and spread back into an even layer.
- Bake for 17-20 minutes, or until fork tender and crispy on the edges, tossing halfway through.
- Sprinkle with additional parmesan and serve immediately.
