Salsa Fresca Chicken

Liven up that boring baked chicken recipe with by topping it with fresh pico de gallo and cheese!

Ingredients
  

  • 1 lb chicken breast cut in half if too thick
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp onion powder
  • salt and pepper
  • cups roma tomatoes diced
  • cup white onion diced
  • ½ cup chopped cilantro
  • 1-2 jalapenos seeded and diced
  • 3 tbsp lime juice
  • 2 cups shredded mozzarella

Method
 

  1. Preheat the oven to 375°
  2. Season chicken breasts with chili powder, cumin, onion powder, salt and pepper
  3. In a bowl, mix tomatoes, cilantro, jalapeno, and lime juice. Season with salt and pepper to taste
  4. Top with shredded cheese and bake 30-35 minutes or until chicken reaches 165°
  5. Serve immediately with rice, cauliflower rice, quinoa, or a green salad
