Mediterranean Chickpea Salad

Not all salads need lettuce! This mediterranean chickpea salad is a light, refreshing, protein packed snack perfect for noshing!

Ingredients
  

  • 15.5 oz can of garbanzo beans drained and rinsed
  • ½ cup persian cucumber chopped
  • 2-3 roma tomatoes seeded and chopped (about 1/2 cup)
  • cup red onion diced
  • ¼ cup chopped parsley
  • juice of ½ lemon 2-3 tbsp
  • 2 tbsp olive oil
  • ½ tbsp zaatar
  • 2 tsp smoked paprika
  • salt and pepper to taste

Instructions
 

  • In a large bowl, mix together all ingredients. Add salt and pepper to taste.
  • Let sit in refrigerator for at least 15 minutes to allow flavors to blend.
  • Serve chilled or room temperature with warm pita, over a bed of lettuce, or as a side.
