Mediterranean Chickpea Salad
Not all salads need lettuce! This mediterranean chickpea salad is a light, refreshing, protein packed snack perfect for noshing!

- 15.5 oz can of garbanzo beans drained and rinsed
- ½ cup persian cucumber chopped
- 2-3 roma tomatoes seeded and chopped (about 1/2 cup)
- ⅓ cup red onion diced
- ¼ cup chopped parsley
- juice of ½ lemon 2-3 tbsp
- 2 tbsp olive oil
- ½ tbsp zaatar
- 2 tsp smoked paprika
- salt and pepper to taste
In a large bowl, mix together all ingredients. Add salt and pepper to taste.
Let sit in refrigerator for at least 15 minutes to allow flavors to blend.
Serve chilled or room temperature with warm pita, over a bed of lettuce, or as a side.
