Lemon Caesar Asparagus

This easy side dish combines the simplicity of lemony asparagus with a delicious caesar salad!

Ingredients
  

  • 1 lb asparagus trimmed
  • 1 tbsp olive oil
  • 2 tsp lemon zest
  • salt and pepper
  • 1 lemon
  • ½ cup caesar salad dressing
  • cup shaved parmesan

Method
 

  1. Preheat the oven to 400°
  2. Trim the asparagus and drizzle with olive oil and lemon zest. Season with salt and pepper to taste.
  3. Place asparagus on a sheet tray and bake in the oven for 10-13 minutes, or until tender.
  4. Meanwhile, heat a cast iron skillet to medium high heat. Slice the lemons to about ¼ in and char them in the skillet, about 2-3 minutes per side.
  5. Remove asparagus from oven, and drizzle caesar dressing over the top and top with half of the parmesan. Place back in the oven for 1-2 minutes to heat through.
  6. Remove from oven and top with charred lemons and remaining parmesan. Serve immediately.
