Hummus Veggie Wraps
Meatless Monday shouldn't leave you wanting more. These hummus veggie wraps are so satisfying and there is no cooking required!

whole wheat wraps or tortillas

hummus
½
seedless cucumber
sliced

roma tomato
sliced
½
red bell pepper
julienned
½
yellow bell pepper
julienned
¼
red onion
sliced

avocado
sliced
½
cup
baby spinach
Instructions
Spread 2 tbsp each of hummus onto the center of your wraps or tortillas
Top hummus on all wraps with an equal amount of cucumber, tomato, red and yellow bell pepper, red onion, avocado, and spinach.
Roll one side of the wrap over the filling, fold in the side, and continue to roll until closed.
Slice in half and serve immediately.
