In a large skillet or cast iron, cook the bacon strips about 3-4 minutes per side until crispy. Set aside on a paper towel to drain the grease. When cooled, chop into small pieces
In the same skilled over medium low heat, add in sliced onions and cook for about 20-25 minutes until they turn a light amber.
Add in sugar, salt, and vinegar and cook an additional 5-10 minutes until the onions turn a deep amber color. Remove from heat
Preheat the oven to 400°
In a small bowl, mix together bacon, onions, mayo, sour cream, 1 cup of shredded cheese, parsley, and onion powder
Spread the mixture into an even layer in a cast iron skillet, and top with remaining cheese.
Bake for 20 minutes or until golden and bubbling. Garnish with chopped parsley
Serve immediately with crackers, veggies, or toasted baguette slices
