Chicken Avocado Caprese Salad

Ingredients
  

Balsamic Glaze
  • 1 cup balsamic vinegar
Caprese Salad
  • ½ lb chicken breast
  • 1 tsp onion powder
  • salt and pepper
  • 2 heads romaine lettuce about 4 cups
  • ¼ cup fresh basil torn
  • ½ cup cherry or grape tomatoes halved
  • ¼ cup red onion diced
  • 1 avocado sliced
  • ½ cup fresh mozzarella cubed
Balsamic Dressing
  • ½ cup balsamic vinegar
  • ¼ cup olive oil
  • tbsp honey
  • 1 tbsp minced garlic
  • 1 tsp onion powder
  • salt and pepper

Method
 

Balsamic Glaze
  1. Pour balsamic vinegar into a small saucepan and bring to a simmer. Cook until the liquid has reduced to about ¼ cup. Set aside
Balsamic dressing
  1. In a small bowl, combine all ingredients for the dressing and set aside.
Caprese Salad
  1. Slice chicken breasts lengthwise to create thinner breasts. Season both side and grill or sear until cooked through. Slice into strips.
  2. Assemble remaining ingredients on top of chopped romaine in a large bowl. Top with grilled chicken and drizzle with balsamic glaze.
  3. Pour on balsamic dressing and toss or serve with dressing on the side.
