Is it really summer without cutting open a watermelon? Probably not! But have you really stretched the extent of what the watermelon can do for you? This watermelon cucumber salad is a refreshing, sweet and salty way to use up the seasons favorite fruit!

I was very skeptical of this social media trend I was seeing, pairing watermelon with salty feta! It makes little sense to me. I love a salty-sweet moment but this wasn’t something I thought could work. Update: it totally rocks! It is salty and sweet in the best more interesting way, and the watermelon and cucumber are so juicy and refreshing. There is no way to get dehydrated this summer with a bowl of this magic.

Watermelon Cucumber Salad

Aside from being super tasty, this watermelon cucumber salad is simple! Being with a small seedless watermelon. They were on sale in my grocery store so I bought a ton. Break it down into 1 inch cubes and place in a large bowl. This should be about 4 cups (maybe more but who cares). This is also a great excuse to buy the cutest little mini or salad cucumbers. They are seedless and the skin is thin so there is no need to peel! Cut 4-5 of these into 1/2 inch rounds and add to the bowl.

Next, take some mint, about 3 tablespoons worth, and julienne it into thin strips. You can also use basil for this as well. I have and it is super tasty too! Add this to the bowl along with 2 tablespoons of olive oil, a teaspoon of salt, 1/4 teaspoon of black pepper and 1/2 cup of feta cheese. Toss to combine all of the ingredients.

You can definitely dig in right away, but it’s also worth covering in plastic wrap and chilling in the fridge for at least 30 minutes. If you have extra watermelon or are just tired of eating it plain, definitely try this recipe. Watermelon cucumber salad with tangy feta is a refreshing addition to your summer picnic lineup.

Watermelon Cucumber Salad

Nothing says summer like sweet, juicy watermelon! And since they are abundantly in season right now, why now play with how we eat them. This refreshing watermelon cucumber salad is the perfect salty sweet way to beat the heat.

Ingredients
  

  • 4 cup seedless watermelon cubed
  • 1 cup mini cucumbers sliced
  • ½ cup feta cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 tbsp mint or basil

Instructions
 

  • Cut the watermelon into 1 inch cubes. Slice the cucumbers into ½ inch slices. Add both to a large bowl
  • To the bowl, add the remaining ingredients, gently stir.
  • Chill 30 minutes if desired, to serve cold. Otherwise serve immediately.
