Luckily, these sausage stuffed sweet peppers are simple and sure to be a hit! Stuffing tender sweet peppers with italian sausage and two cheese is bound to win anyone over.
Sweet Peppers
Sweet peppers, or baby bell peppers as they are often referred to, are deliciously sweet and petite! Honestly, they are great raw! Dip them in hummus or tzatziki. Slice them over a salad for a great crunch, or pickle them like you would red onions. Or in this case, stuff them!
Start by slicing 12 peppers in half. Next, remove the seeds and membrane and drizzle them with olive oil and a sprinkle of salt. Finally, place them skin side down on a baking sheet, and back them in a 400 degree oven for 10 minutes. You want them to be tender and slightly browned. Let them cool a bit while you prepare the filling.
Sausage and Cheese Filling
The oven roasted peppers are great to snack on, but why not make them into glorious sausage stuffed sweet peppers.It all starts with mild Italian sausage. Fry the sausage until crumbled and crisp. No pink! Add that to a gloriod mixture of cheese and spices.
- 6 oz- cream cheese
- 1 cup- Monterey Jack cheese
- 1/4 cup- red onion, diced
- 1 clove- garlic, minced
- 3 tbsp- minced parsley
- 1/4 cup- fresh tomatoes, seeded and diced
- salt and pepper, to taste
Mix all of this with the cooked sausage and boom, the best sweet pepper stuffing! Next, use a piping bag or plastic sandwich bag with the corner cut off to pipe into each pepper. Be generous, there is enough filling to fill each pepper plus some.
Place these bad boys back in the oven for another 7-8 minutes to cook through, then crank the oven up. Put the oven on a high broil and cook for 2-3 minutes until the cheese begins to brown. Finally, remove from the oven and allow to cool enough to eat. You can serve these warm or room temp.

Sausage Stuffed Sweet Peppers
Ingredients
- 12 sweet peppers
- 2 tsp olive oil
- 1 tsp salt
- ½ lb italian sausage crumbled
- 6 oz cream cheese softened
- 1 cup monterey jack cheese
- ¼ cup red onion diced
- 1 clove garlic minced
- 3 tbsp fresh parsley minced
- ¼ cup tomatoes seeded and diced fine
- salt and pepper
Instructions
- Preheat the oven to 400°
- Slice each pepper in half lengthwise and remove the seeds and membrane. Drizzle with olive oil and salt, and lay skin side down on a baking sheet.
- Bake peppers for 10 minutes or until softened and slightly browned. Allow to cool slightly.
- Meanwhile, cook italian sausage until no longer pink. Drain excess fat.
- In a large bowl, mix together sausage. cream cheese, monterey jack, onion, garlic, parsley (reserving some for garnish), tomatoes, and salt and pepper.
- Place filling in a piping bag or sandwich bag, cutting off one corner, and pipe a generous amount into each pepper.
- Place back in the oven for 7-8 minutes. Turn the broiler on high and broil for 2-3 more minutes or until browned on top.
- Cool slightly and sprinkle with reserved parsley. Serve warm or completely cooled.
