Name a better duo than sausage and peppers? Add marinara sauce and loads of fresh mozzarella cheese baked until gooey and you have hearty, amazing, sausage hoagies!

I honestly love whoever created italian sausage. Honestly! Sir or ma’am, thank you! It is soooo good in pasta, pizza, soups! I sub it out for ground beef as often as I can. This recipe is perfect because it gives me yet another way to shovel it in my mouth!

Cooking Italian Sausage

Now I don’t know about you, but I have burned plenty of italian sausage on the outside only to find it was still pink on the inside. So frustrating! So I now use a hybrid method of cooking to ensure no burn and no raw center.

Start by placing a deep saute pan over medium heat. Add your sausage links (I used mild italian sausage, but hot or sweet works as well) to the saute pan with about 1/2 inch of water. Cover with a lid and allow the water to reach a strong simmer/slow boil. Cook them for 10-12 minutes. This lets them slowly steam/poach so they can cook on the inside without burning the casing.

Once they have reached 160 degrees, drain the water and place back on the burner. Now we can brown the outside. Cook for an additional 2-3 minutes per side to get that nice snap on the casing that we all love.

Assemble the Hoagie

While your sausage is cooking, slice a red and a green bell pepper, plus one red onion into long thin strips. Put them in a separate saute pan and cook over medium heat for 5-10 minutes or until the peppers and onions have softened and browned.

Now it’s time to build our hoagies! Preheat the oven to 400 and line a baking sheet with parchment paper. Line 4 hoagie rolls up next to each other and split them open. Add one sausage link to each roll, and top with 1/4 of the cooked peppers and onions. Finish each roll with 1/4 cup of marinara sauce and 1/2 cup of fresh grated mozzarella.

Bake in the oven for 10 minutes, or until the cheese melts and begins to turn golden brown. Serve these up right away! Maybe consider making a double batch because these amazing sausage hoagies will go fast!

Ingredients
  

  • 4 links mild italian sausage can use sweet or hot
  • 1 red bell pepper julienned
  • 1 green bell pepper julienned
  • 1 red onion julienned
  • 4 hoagie rolls
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella

Instructions
 

  • Preheat the oven to 400°
  • In a deep saute pan over medium high heat, add sausage links and ½ inch of water. Cover with a lid and allow sausage to simmer in water for 10-12 minutes to cook through.
  • Meanwhile, slice peppers and onion into long strips. In a separate saute pan, cook over medium heat until soft and slightly browned, 5-10 minutes
  • Remove lid from the sausage and drain water and cook an additional 5 minutes to brown.
  • On a baking sheet lined with parchment paper, split open hoagie rolls. Place one link in each roll. Top each sausage with ¼ of the onion pepper mixture, ¼ cup of marinara, and ½ cup of cheese.
  • Bake in the oven for 10 minutes or until the cheese is melted and browned. Serve immediately.
