Summertime is nothing without lemonade, so summer desserts are incomplete without raspberry lemonade blondies! The bright lemony blondies, speckled with fresh raspberries, will remind you of your favorite summertime drink! Topped with a rich raspberry cream cheese frosting, this dessert will definitely be a poolside staple.

Easy Blondie Batter

I love blondies and their chocolatey counterparts, the brownie, because they are so easy to make when that sweet tooth kicks in. For these fruity brownies, you only need a few ingredients:

  • 2 Sticks Unsalted Butter
  • 2/3 Cup of Sugar
  • 1/4 Cup Fresh Lemon Juice
  • 1 Egg
  • 2 1/8 Cups of Flour
  • 1/2 Tsp Salt and Baking Powder
  • 1 Carton (8oz) Fresh Raspberries

Now it’s time to whip out that stand mixer! This batter is really thick, so hand mixing is probably not a great option (unless you have great forearms).

Using the whisk attachment, whip the butter and sugar on a high speed until fluffy. Add in the lemon juice and egg and keep whipping until incorporated. On a low speed, add in your dry ingredients and mix until incorporated. Next, turn the mixer off and use a rubber spatula to fold in the raspberries (they will break apart, that’s okay!).

Evenly spread the batter in a 9×9 square baking pan lined with parchment (for easy removal) and bake at 350 for 30 minutes. Let them cool completely and it’s time to frost!

Raspberry Cream Cheese Frosting

Top these delicious blondies with the easiest cream cheese frosting! With only 4 ingredients, it comes together in a flash!

  • 4 oz Cream Cheese
  • 1 Cup +1 Tbsp of Powdered Sugar
  • 1 Tbsp of Lemon Juice
  • 6-8 Raspberries

Cook the raspberries, lemon juice, and 1 tbsp of sugar in a small saucepan for about 5 minutes until a syrupy mash forms. In a stand mixer, beat the softened cream cheese and powdered sugar together until fluffy, and add in the raspberry syrup. And just like that you have a sweet, slightly tart, fluffy frosting to schmear on top of these blondies.

These raspberry lemonade blondies are the perfect poolside treat! The bright flavor is a light take on what typically are rich blondies. Pair them with a glass of actual raspberry lemonade, or eat them alone! Either way, these are the perfect summertime dessert.

Ingredients
  

Blondies

  • 1 cup unsalted butter 2 sticks, softened
  • cup sugar
  • 1 egg
  • ¼ cup lemon juice
  • 2 ⅛ cup all purpose flour
  • ½ tsp salt
  • ½ tsp baking powder
  • 8 oz fresh raspberries

Cream Cheese Frosting

  • 6 raspberries
  • 1 tbsp lemon juice
  • 1 cup powdered sugar plus 1 tbsp
  • 4 oz cream cheese softened

Instructions
 

Blondies

  • Preheat the oven to 350°
  • In a stand mixer with a whisk attachment, beat butter and sugar until light and fluffy.
  • Add in egg and lemon juice and mix until incorporated.
  • Slowly add in flour, baking powder, and salt, and continue mixing until fully incorporated.
  • Turn the mixer off and gently fold in the raspberries. The batter will be thick so the raspberries will break apart.
  • Pour batter in a 9x9 square baking pan lined with parchment. Bake for 30 minutes or until a toothpick or fork comes out clean. Edges will be slightly golden. Allow to cool completely.

Cream Cheese Frosting

  • While the blondies are baking, add a small handful of raspberries, about 6-8, 1 tbsp of powdered sugar, and lemon juice to a small sauce pot over medium heat. Cook the raspberries down, mashing them with a fork, about 5 minutes or until the juices begin to simmer and reduce. This should yield about a tablespoon or two of syrup/pulp.
  • In a stand mixer, whip softened cream cheese and sugar together until light and fluffy. Add in the raspberry syrup/sauce and continue to mix until fully incorporated.
  • Using an offset spatula, completely cover the cooled blondies with an even layer of frosting. Refrigerate for 10 minutes to allow the frosting to firm up.
  • Cut into 16 even squares and serve.

Notes

Because the frosting contains dairy, the blondies need to be stored in the refrigerator.
