Mornings don’t have to be all cereal or scrambled eggs. Sometimes what you really need are some fresh baked goods. Start your morning off with a fresh cup of coffee and some delicious fresh-baked orange cream scones. These scones are so fluffy and tender, and coated with a sweet orange glaze. Scared of baking? Don’t worry, these come together in just 20 minutes!
Now while some people know me for my baked goods, I will be honest, baking intimidates me! That’s why I make the same recipes over and over. I can make a meannnn cheesecake! It isn’t like cooking savory food, where you can add a little of this and a pinch of that. It is precise and the wrong ratio of ingredients is bound to result in a failure.
These orange cream scones are a great entry into baking though! No crazy ingredients, no whipping to stiff peaks. Just gently mix a few ingredients and you are on your way to the most flaky, perfectly sweet scones.
Making Scone Dough
To make these delicious orange cream scones, start with a few ingredients you are sure to have in your kitchen. In a mixing bowl, sift together:
- 2 cups of all purpose flour
- 1/3 cup of sugar
- 1 tbsp baking soda
- a pinch of salt
To this, mix in the zest of one orange, about 1 tablespoon. Now this next step is the key to light, fluffy scones: cold butter! Take 1 stick (1/2 cup) of ice cold butter and grate it on a cheese grater. Gently toss the butter into the flour by hand or with a wooden spoon. You don’t want to overmix, as this will cause the butter to melt. Cold butter is key because as it melts in the oven, it steams and creates air pockets in the dough=fluffy scones!
If you don’t have a grater, you can cut the butter into cubes, and using a pastry cutter, work it into the dough until the butter is pea sized. Next, pour in 1/2 cup of cold heavy cream, 1 egg, and 1 tsp of vanilla extract. Mix gently into the dough until all flour has been moistened, but it does not yet form a solid ball. Pour the loose dough onto a floured surface and form it into a disk, about 1 inch thick.
Orange Cream Scones
Cut the disk into 8 triangles and place them on a nonstick baking sheet. Brush with additional heavy cream and bake in a 400 degree oven for 14-16 minutes or until the edges begin to turn golden brown. Place the scones on a baking rack to cool. While they are cooling, let’s make the glaze. In a bowl, whisk together:
- 1/4 cup of melted unsalted butter
- 1 3/4 cups powdered sugar
- 1/2 tsp vanilla extract
- 1 tbsp orange juice
- 1 tsp orange zest
- a pinch of salt
Pour or spoon the glaze over the cooled scones. Wait a few minutes to allow the glaze to harden and enjoy. And just like that, you have whipped up the perfect batch of orange cream scones! Nothing can stop you from being the baker you were destined to be!
