These fluffy mimosa pancakes are the perfect mashup, combining bursting bright orange flavor with a delicious champagne glaze!
Foolproof Fluffy Pancakes
Now, I have written about the secrets to a fluffy pancake before in my buttermilk pancake recipe, but just as a reminder, here are the keys:
- First, I start by beating beat egg whites, seperate from the yolk and other wet ingredients, to soft peaks. Beaten egg whites is an easy trick to add volume and air to any batter.
- Second, barely mix the batter. Over mixing can actually activate too much gluten in the flour, making the final product dense. I like to use a wooden spoon or rubber spatula to gently combine the ingredients. Clumps of flour are okay in this case.
- Finally, I fold in the whipped egg whites. Just 5-6 more folds does the trick. You don’t want to deflate the egg white, otherwise, what was the point.
Transform Regular Pancakes to Mimosa Pancakes
The great thing about pancakes is they are delicious on their own, but also a blank canvas for so many other flavors! These mimosa pancakes start with a basic buttermilk pancake recipe, and get just a kick of extra flavor.
The additions are actually quite simple, and only include a few ingredients you may already have on hand if you are prepping a Sunday Brunch! The original recipe calls for 2 cups of buttermilk, so simply sub out 1 of those cups with equal parts champagne and orange juice. Now you have a pancake batter that is just about the same consistency, but with so much more flavor!
Toss in a tablespoon of orange zest and just a tiny bit of orange extract (optional) to really drive the orange flavor home. You’ve just turned a simple pancake into a bright mimosa pancake!
Mimosa Glaze
Stick with the theme and top these pancakes with a super easy 4-ingredient glaze! These beauties deserve something a little more sophisticated than regular syrup! All you need is:
- 2 cups powdered sugar
- 3 tbsp orange juice
- 2 tbsp brut champagne
- 2 tbsp of fresh orange zest
Whisk them all together and that’s it! And of course you can always add more sugar to thicken (about 1 tbsp at a time) or more orange juice to loosen (about 1 tsp at a time) until you reach your desired consistency.
The best thing about this recipe is that once you are done cooking, there is still plenty of champagne left in the bottle! Happy brunching!

- 2 cups all-purpose flour
- ¼ cup sugar
- ½ tsp baking powder
- 1 cup buttermilk
- ½ cup orange juice
- 2 eggs separated
- ¼ cup salted butter melted
- 1 tsp vanilla extract
- ½ tsp orange extract optional
- 1 tbsp orange zest
- ½ cup dry/brut champagne

Instructions
Pancakes
- In a large bowl, sift together flour, baking soda, baking powder.
- In a separate small bowl, beat egg whites until they reach soft peaks.
- In another bowl, whisk together buttermilk, orange juice, egg yolks, melted butter, orange zest, and both extracts. Add in the champagne and stir to combine.
- Slowly add buttermilk mixture to flour mixture, stirring with a wooden spoon or rubber spatula to combine. DO NOT overmix. There may be flour clump in the batter, but that is okay.
- Now, fold in the egg white, only folding a few times until barely combined. You do not want to deflate the egg whites.
- Heat a buttered griddle or skillet over medium low heat. Scoop batter into the pan with an ice cream scoop or ¼ cup measure.
- Cook until the top of the pancakes look dry, and bubbles emerge, about 2 minutes. Flip and cook an additional 30 seconds-1 minute.
Mimosa Glaze
- In a large bowl, whisk together all of the ingredients until smooth.
- If the mixture is too runny, add more powdered sugar, one heaping tablespoon at a time. If it is too thick, add in 1 tsp of orange juice at at time until the desired consistency is reached.
- Pour immediately over warm pancakes and serve.
