Is it summertime without celebrating the delicious, gorgeous tomato!? And maybe this is a southern thing, but a juicy tomato sandwich hits all the right notes. But why stop at just the tomato? Why not layer on tons of other fresh, summery ingredients too? This heirloom mozzarella sandwich shows off layers of fresh tomato and cheese, avocado, sprouts, and even a delicious, made from scratch, herb mayo! No deli meat in sight and this sandwich still hits the spot!
Herb Mayo
The surprise flavor bomb of this sandwich is the homemade herb mayo. And I will start by saying, yes, skip this step by using your favorite store-bought mayo, adding in some garlic and herbs! But if you have time (and by time I literally mean 60 seconds), then I urge you to make it from scratch!
To make the basic mayo, start with a mason jar or large cup. Add in 1 pasteurized egg, 1 cup of avocado oil or other neutral oil, 2 tsp of lemon juice, 1 tbsp of apple cider vinegar, and a pinch of salt to taste. You can add in 2 minced cloves of garlic here as well, or add then after the mayo is done to keep it chunky. Insert an immersion blender, being sure the egg yolk is under the blade, and pulse for up to a minute, moving the blender up and down, until the mixture is thick and creamy.
You can also do this by hand, placing the egg in a bowl with the lemon juice and a pinch of salt. Beat until fluffy and slowly drizzle in the oil, continuing to whisk until thick and creamy. Now, fold in 2 tbsp of chopped basil, 1 tbsp of minced chives, and 1 tsp of dried oregano. Season with more salt and pepper to taste, and set aside.And there you have it, a delicious, made from scratch mayonnaise that can be spread, dipped, or slathered on anything!
Heirloom Mozzarella Sandwich
Now it is time to assemble the sandwich. Totally optional, but start by toasting two thick slices of multigrain bread. You can skip this step, but because the sandwich filling is pretty soft, toasting adds some much needed texture and stability. To assemble, start by spreading a heaping tbsp of mayo onto each slice of bread.
On one slice of bread, smash one half of an avocado and sprinkle with a pinch of salt. Top that with a few leaves of romaine or Bibb lettuce and 3-4 thick slices of fresh mozzarella.Β On the other slice of bread, layer on a few tbsp of of the alfalfa sprouts and then top with thick slices of the heirloom tomatoes. Season the tomatoes with a pinch of salt.Β Sandwich both slices of bread together and enjoy immediately. This heirloom mozzarella sandwich with homemade herb mayo may be the only way I enjoy tomato sandwiches for the rest of eternity!

Heirloom Mozzarella Sandwich with Herb Mayo
Ingredients
Herb Mayo
- 1 cup avocado oil or another neutral oil like canola
- 1 large egg
- 2 tsp lemon juice
- 1 tbsp apple cider vinegar
- 2 cloves garlic minced
- salt and pepper to taste
- 2 tbsp chopped basil
- 1 tbsp chopped chives
- 1 tsp dried oregano
Heirloom Mozzarella Sandwich
- 4 slices thick cut multigrain bread
- 1 large heirloom tomato or 2 different colored ones
- 1 medium avocado pitted and sliced
- 4-5 romaine or Bibb lettuce leaves
- 4 oz fresh mozzarella sliced
- ΒΌ cup alfalfa sprouts
Instructions
- Start by toasting your bread (optional, but highly recommended) to your likeness.
- While the bread is toasting, let's make the herb mayo.
- Immersion Blender: In a mason jar or large cup, add in all of the mayo ingredients except the herb. Insert the immersion blender, making sure the egg yolk is under the blade of the blender, and blend for 40 seconds to one minute or until thick and light in color.
- Hand Method: In a bowl, beat the egg with salt and lemon juice until light and fluffy. Slowly drizzle in the oil while continuing to whisk, until the the mixture is thick and creamy. Whisk in the vinegar to thin it out as needed and minced garlic.
- Once the mayo is thick, fold in your chopped herbs and set aside.
- Spread a heaping tbsp of mayo onto each slice of bread.
- On one slice of bread, smash one half of an avocado. Top that with a few leaves of lettuce and some slices of fresh mozzarella
- On the other slice of bread, layer on some of the sprouts and then top with thick slices of the heirloom tomatoes. Season the tomatoes with a pinch of salt.
- Sandwich both slices of bread together, repeat with the remaining slices of bread, and serve immediately.
