Dinner does not have to be hard. I repeat: DINNER DOES NOT HAVE TO BE HARD! Sometimes the most delicious meal is right under your nose. All you need is a little creativity, and an oven! Turn the classic chicken caesar salad into a warm hearty dinner with this 3-ingredient baked caesar chicken, served over your favorite pasta or rice.
3 Ingredients
During the week, I am always so busy, despite working from home. I look up from my laptop and next thing I know, it is 7pm and I haven’t eaten since 11. Unless I put a lot of thought into it ahead of time, dinner is easily an afterthought. Luckily this baked caesar chicken fits right into even the busiest days.
It is as simple as 3 ingredients! Begin by placing 1lb of boneless skinless chicken breast into a casserole dish. Season both sides liberally with salt and pepper. (S&P do not count in my list of ingredients because they are kitchen staples which I am sure you have on hand for all cooking). Next, pour 2 cups of caesar salad dressing over the chicken. This seems like a lot, but when the chicken begins to cook and release juices, it turns into a delicious sauce!
Turn the chicken over in the dish a few times to make sure all sides are coated with the dressing. Next, top the chicken with a generous helping of grated parmesan cheese, about 3/4-1 cups worth. At this point you can wrap with chicken in plastic wrap and allow it to marinade one hour up to overnight. If you are anything like me, though, you are whipping up this recipe in a hurry, so take it straight to the oven. And that’s it! Chicken breast, caesar dressing, and parmesan cheese.
Baked Caesar Chicken
When you are ready to cook the chicken, preheat the oven to 375 degrees. Remove any plastic wrap or foil from the casserole dish and place in the oven. Bake for 30-35 minutes or until the internal temperature reaches 165 degrees and the cheese on the top is golden brown. To make sure you have an accurate reading, make sure you are inserting the thermometer into the thickest part of the chicken breast.
Once the chicken is cooked through, remove from the oven. Serve by slicing each breast and placing the slices over your favorite pasta or rice, and drizzle with the delicious sauce that has formed in the pan. PRO TIP: Pour the sauce right over your pasta and toss to coat, then plate with chicken on top.Garnish with chopped fresh parsley if desired and serve immediately. And just like that, with almost no prep, and 30 minutes in the oven, you have a delicious meal for four ready to go!

Baked Caesar Chicken
Ingredients
- 1 lb boneless skinless chicken breast
- 2 cup caesar salad dressing
- ¾ cup parmesan cheese
- chopped parsley for garnish
Instructions
- Preheat the oven to 375°
- In a greased baking dish, lay your chicken breasts flat. Season both sides with salt and pepper.
- Pour caesar dressing over the chicken and turn to coat. Sprinkle parmesan on top
- Bake for 30-35 minutes or until the internal temperature reaches 165° and the top is golden brown.
- Serve immediately over pasta or rice and drizzle with sauce. Sprinkle with parsley for garnish.
