Of all of the food in the world, I am not sure anything is more comforting that a warm chocolate chip cookie. The melted chocolate pull is rivaled only by the cheese pull! But why sell yourself short with only one type of chocolate. You deserve three! These triple chocolate chip cookies are warm and gooey, filled with white, milk, and dark chocolate!

Cookie Dough

For these cookies, I use my basic chocolate chip cookie dough recipe. Every recipe starts with flour, butter, brown sugar, and eggs, in different ratios. I found that this recipe yields the perfect balance of soft and chewy, with just enough crispy edge.

Start with the dry ingredients. In a large bowl, sift together:

  • 2 cups of all-purpose flour +2 tbsp of cornstarch
    • OR, ALTERNATIVELY: 1 cup of AP flour, 1 cup of cake flour
  • 1 tsp cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2/3 tsp salt

In a separate bowl, using a whisk or electric hand mixer, whip together 1 stick of butter (1/2 cup, 8 tbsp), 1/2 cup packed light brown sugar, and 1/3 cup of granulated sugar until light and fluffy.

Whisk in one egg and one egg yolk until combined. Now slowly, one cup at a time, add in the flour mix. Switch to a rubber or wooden spoon to mix the dough together. The dough will be thick and a little tough to mix but keep going!

Triple Chocolate

Once you have the dough together, it’s time for chocolate! Instead of just another cookie with milk chocolate chips, why not use 3? I used a combo of dark, milk, and white chocolate. I like having the variety of sweet and bitter, dark chocolate cuts through the super sweet milk and white chocolate! The dough does have a fair amount of sugar, so you could even sub out the milk chocolate for a semi-sweet chocolate instead.

Add 3/4 cup of each type of chocolate chips to the dough and mix until incorporated. Using a small ice cream scoop or tablespoon, for the dough into 20 even sized balls. They will be about the same size as a golf ball. Place the balls on a cookie sheet lined with parchment paper and bake in a 400 degree oven for 10-12 minutes.

The cookies will still be very soft and only slightly golden brown, but they will continue cooking as they cool. Remove them from the oven and cool for about 5 minutes, then transfer to a cooling rack. Serve them warm, highly recommended!

Ingredients

  • cup granulated sugar

  • ¾ cup dark chocolate chips
  • ¾ cup milk chocolate chips

Instructions
 

  • Preheat the oven to 400°
  • In a large bowl, sift together flour, cornstarch, baking powder, baking soda, and salt.
  • In a separate bowl, with a whisk or electric hand mixer, beat the butter and sugars together until fluffy. Add in egg and egg yolk and still until combined
  • Slowly add in flour mix, combining with a rubber or wooden spoon. Add in chocolate chips and stir until combined.
  • Using a large spoon or small ice cream scoop, form dough into balls, about the side of a golf ball. Place on a baking tray lined with parchment paper, about 2 inches apart (they will spread.
  • Back for 10-12 minutes our until slightly browned on the top. Remove from oven and allow to cool on baking sheet for 5 minutes. Then move to a cooling rack to cool completely.
  • Serve while warm or store in an airtight container.
