If you’ve never had fiesta dip, I promise you are completely missing out on the most delicious, addicting dip ever. Cheesy and zesty, this creamy Tex Mex dip is so simple to make. No cooking, no stoves, no pile of dishes. Full of Mexican spices, this ranch based dip comes together in one bowl!

Fiesta Dip

I was first introduced to this fantastic dip a few years ago. I was on vacation with my fiance’s family for the first time, and one night when we were all around the table playing cards, his mom set a bowl of fiesta dip in front of me with some tortilla chips. Needless to say it was love at first sight, and self-restraint was not the name of the game that night. I may have finished a whole bowl by myself (no shame in my game!).  It’s been an essential part of all of our trips now.

At its core, fiesta dip is just 3 simple ingredients!

Just stir to combine, and that’s it. No waiting, no cooking. Just mix and snack.

Add-Ins

While the dip is magnificent as is, I decided to take it up a notch by adding in a few more fun ingredients. I used about 1 cup each of:

  • Frozen Corn
  • Black Beans
  • Rotel (tomatoes with diced chiles)
  • Chopped cilantro (about 1/2 a cup)

Adding these adds some texture and little surprises of flavor throughout the dip. It also makes the dip a lot more filling, and you won’t feel as guilty about eating it all since it’s full of veggies.

You could also add in

  • diced jalapenos
  • green onions
  • diced red onions
  • fresh tomatoes (seeds removed)
  • red pepper (roasted or fresh)

Whatever you add, make sure to make a double batch! It is wildly addicting and won’t last long!

Fiesta Dip

Spice up your regular party dip with this veggies packed, super easy Tex Mex style ranch dip.

Ingredients
  

  • 16 oz sour cream
  • 1.1 oz Hidden Valley Fiesta Ranch dip seasoning mix 1 packet
  • 2 cups shredded cheddar cheese
  • 1 cup black beans rinsed and drained
  • 1 cup frozen corn defrosted
  • 5 oz rotel (diced tomatoes with green chilies) about ½ a can
  • ½ cup chopped cilantro

Instructions
 

  • In a large bowl, combine all ingredients.
  • Allow to chill for 10-15 minutes, then serve immediately.
